Chicken with Quinoa and Veggies
Wonderful recipe! Simple ingredients and easy to prepare, but great complexity of flavor! The small changes I made were to use lemon instead of lime because that's what I had and it seemed to fit better, take out zucchini because we don't like it, use about a tsp. of dried basil instead of fresh, and not add oil a second time (just 2 Tbsp. total).

Gluten-Free Peanut Butter Cookies
These were good! My husband and I liked them, but our friends LOVED them! I love how the texture is really chewy yet firm despite having no flour. Definitely add 1/2 tsp. baking soda and 1/2 tsp. vanilla, as suggested by other reviewers, and use a regular, greased cookie sheet to make sure these come off easily.

Pasta with Italian Sausage and Pumpkin Sauce
This was so easy and good! I made a few changes that I think made it better and healthier too: I replaced half and half and sour cream with 1 cup plain yogurt. I added about 6 oz frozen chopped spinach to sausage mixture. And I used spinach feta chicken sausage instead of Italian.
