Slow Cooker Chicken Taco Soup

This one is definitely a keeper, at least as far as my mad for Tex-Mex food husband is concerned. I made it exactly as described except that for "chili beans" I subbed pinto beans. Also, it wasn't specified in the recipe, but I did drain the beans as I find the pot likker from black beans particularly can be rather unwholesome in appearance. "Beer" is rather a broad category, I used our favorite American style lager (Yuengling Traditional) which is similar in taste and appearance to some Mexican beers.

Sausage Stuffed Jalapenos

I made these this past weekend for a Christmas Open House and they went over very well. I did have someone ask for the recipe for the "appetizer with the green peppers" and she was floored to learn that these were actually jalapeƱos. Seeding them and then baking takes most of the heat out of them so that they are just spicy instead of fiery.

Al's Sufferin' Succotash

Let me tell it straight - I don't like lima beans. And as a whole, we don't eat many vegetables. When I do make them, we eat them because they're "good for you" and the leftovers go begging. But I was looking for something fast and easy that I already had the ingredients on hand and this fit the bill. Not only did we scarf them up as a side dish, I'm finishing off the last of the leftovers as we speak! Definitely a keeper.
