Garlic Mashed Potatoes and Beef Bake
I have this recipe in a Campbell's cookbook and have always loved it. I was surprised at the reviews saying it was too watery. The cookbook version doesn't call for individual potato ingredients, only 3 cups hot mashed potatoes. I do think it needs more potatoes as the covering is a bit skimpy in my opinion. I do season the meat as it's cooking as well with standard hamburger seasonsins...garlic, onion, seasoned salt. It continues to be a winner in our house.

Sunshine Chicken
When my 4 year old ask for seconds I know the recipe is good. When my 2 year old asks for seconds, this recipe goes straight into constant rotation. I did follow others suggested mods, as I only use boneless skinless chicken and I never have corn syrup in my house (I substituted honey, per other reviews). Very pleased with this change up to the standard bbq or teriyaki chicken.

Savory Halibut Enchiladas
These are so wonderful. I make a bit more filling in a couple less tortillas though. I like mine stuffed! I've also toyed with using red onion instead of and/or with the green onion. And also topping with spicy diced green chiles. I'm able to make the recipe perfectly with only one can of enchilada sauce as well. Just variations on a fabulous recipe.
