Chicken Fried Steak I

This recipe was really easy to make. I added a seasoned pepper blend and seasoned salt to the flour mixture. It turned out great. I served the steaks with cornbread and coleslaw for a yummy, filling meal. My husband loved it!

Homesteader Cornbread

This is an excellent recipe for nice, sweet, moist cornbread. It could use some improvement, but definitely a keeper basic recipe. My husband thought it could use a bit more cornmeal.

Clone of a Cinnabon

The bread machine did all the work, which was nice, but my rolls turn out a little dense. My husband says he likes them that way, and that Cinnabons are like that too, but I think I like my bread a little airier. These rolls taste great though, sooo good!

This recipe was so fast and easy to make. I added sliced green peppers with the zuchinni, and it tasted good. I've had better curry, but this recipe is fine if you are in a hurry.

Awesome Slow Cooker Pot Roast

Such an easy recipe! I'm 8 1/2 months pregnant, and wanted a meal that I could fix without a lot of time on my feet. The pot roast was tender, and tasted great!

Breakfast Casserole II

Cottage Cheese Chicken Enchiladas

I dipped the corn tortillas in the enchilada sauce before putting in the filling, and then spread the remainder on top. I also topped the enchiladas with green onions and sliced olives. They tasted great!

Baked Pork Chops I

These chops were so juicy and tender! My husband always complains when pork turns out dry, but he had nothing but good things to say about this recipe. I was kind of shy about seasoning the chops. I thought that with the sauce and the seasoned bread crumbs, they might turn out too salty, but that wasn't the case. Next time I'll be sure to season the meat well.

Caramel Filled Chocolate Cookies

I followed the advice of the other reviews and added an extra 1/2 c. flour, 1/2 tsp salt, and 1/2 c. cocoa. For the middle, I tried rolos and also Hershey's chocolate creme filled caramel classics. They pretty much tasted the same to me and my husband, so I opted for the caramel classics, since they were cheaper :) I used an 18/10 gauge cookie dough scoop, which made a lot more than 48 cookies, and made assembly really easy too. If you make the cookies this way, don't refrigerate the dough since it gets too hard, but just take a scoop of dough, press the caramel into the center and seal it in. I didn't add any of the nuts into the dough, I only dipped the top and it seemed like there were plenty of nuts. I did have a bit of a problem with them falling off though, maybe I didn't press them into the top far enough. I also lined my sheets with parchment paper and baked for 10 minutes. Wow, great cookies though!

Slow Cooker Tipsy Chicken

I love olives, so I loved this recipe, but my husband is not so big a fan. I only used about half of the olives called for, and the flavor still came through very strongly. Such an easy recipe though, and delicious served over white rice.

Dark Chocolate Cake I

I made this cake for my husband's birthday, and I made it the day of, because I wanted it to be fresh, but I wish I made it the night before. It was much better the next day. I filled the cake with a thick chocolate pudding, and it was great!

Creamy Blueberry Pie

I was looking for blueberry recipes when I came across this. I didn't have any shortening or pie crusts on hand, so I just made the filling in an 8x8 baking dish and baked it like a cobbler. It was easy and delicious. The only thing I would change next time is maybe add a little vanilla to the sour cream mixture, and toss the berries in a little lemon juice to bring out their brightness. I liked this recipe so much I substituted thinly sliced nectarines (tossed in a little lemon juice) for the berries and made the "cobbler" again!

This was awesome! I made it with white vinegar, but I think I might try balsamic next time. I'm not a huge fan of parsley, and I thought 2 bunches seemed like an awful lot, but I put it all in and was not disappointed! If you like dipping your bread in olive oil and vinegar, you will love this!

Tater Tot Casserole IV

This was really good! I followed others' advice and put in half the meat, and double the veggies. I also (sinfully) added some sour cream when I mixed in the soup, and topped the tots with shredded cheddar the last 5 minutes of baking. My 1 1/2 year old couldn't get enough of it!

Mediterranean Lemon Chicken

I marinated the chicken for a couple hours, and like other reviewers, loved the flavor, but wished I had a little more of the yummy juice to spoon over my chicken and rice. I will AT LEAST double the marinade ingredients next time!

Albondigas Soup I

My family loved this soup. I made the meatballs, and there were plenty, with 1/2 lb. gr. beef, 1/2 lb. sausage. I also added 1 cup of cooked rice to the meat mixture. I didn't add another onion to the meat, because there was already plenty in the soup. I used most of a jar of Pace Mexican Creations Ranchero cooking sauce for the salsa, and I think it worked well. One draw back, I like tomatoes, a lot, but it seemed like between the diced tomatoes and the salsa, there were way too many. I think next time I'll break it up a little and add some different veggies and just one can of tomatoes. It really was a delicious soup!

Chinese Chicken Salad III

I thought this salad was really good. The dressing was quite thick though. I know it's supposed to be low fat, but I ended up adding a little vegetable oil and water to try to thin it out a little. I had a hard time getting the dressing to coat the salad evenly when it was so thick. It tasted great though!
