Cedar Planked Salmon

This was some of the most delicious salmon we've ever eaten, and we've eaten our fair share of salmon! I prepared the recipe pretty much as written, except that for the green onion, I didn't chop it, I just took a few stalks, cut it into 4" lengths, bruised it with the back of my knife really well, and then tossed it in the marinade. I wanted the flavor, but I have boys that are picky about green stuff. :) I poured the marinade into a rimmed baking sheet, and then turned my salmon, skin still on, in the marinade a few times to coat, and then finally let it rest, skin side up in the marinade until we were ready to grill. It was only marinating for maybe 30 mins, but the salmon was SO tender and flavorful. This is our new favorite way to cook salmon, provided we have a couple of cedar planks!

Chimichurri Sauce

I can't get enough of this stuff. It's great on everything! I don't add as much cumin as it calls for - I like the fresh taste of all the parsley. I think I've been adding about half the amount of cumin, and it is still delicious and flavorful.

The Best Bean and Ham Soup

Great soup! I've never had bean and ham soup, but thought I'd try it instead of split pea. . . I made the recipe exactly as stated. It was delicious.

Amish Bread

After reading a bunch of reviews, I noticed that there were some different measurements being thrown out for the cup equivalent of 18 Tbs. I looked it up, there are 4 Tbs. to a 1/4 cup, so 18 Tbs. = 1 cup + 2 Tbs.

Easy Morning Glory Muffins

I'm not a sweets person, so I really enjoyed these muffins! They are dense and not-too-sweet, with a surprise in every bite. Will it be a carrot? A raisin? Some apple? A nut? What's not to love from a muffin with a little of everything?! It took me a little while to find the coconut, but I finally found the unsweetened kind in the health food/organic aisle.

Boilermaker Tailgate Chili

Wow, this chili was good! It had a mild, gentle heat, so the kids could eat it too. Like some other reviewers, I cooked my own bacon, and then sauteed the veggies in some of the drippings. I also cut up my own chuck roast instead of using ground, and browned that first too. I put everything in a crock pot (mine is 7 quarts, and it was FULL), and cooked on low for 8 hours. I used one can each of kidney, pinto, and black beans for the "chili beans", and one can of "ranch-style beans" for the beans with chili sauce. I also didn't know I was so low on cumin, so I didn't have very much in there, but with all the other flavors going on, I didn't miss it! I will definitely make this one again.

Grandmother's Buttermilk Cornbread

This is my new cornbread recipe! It had a unique mixing method, but maybe that's what makes it so good. I doubled the recipe and made 24 good-size corn muffins. I think they only took about 15 minutes in my convection oven. If you're like me and don't have buttermilk on hand very often, you can add 1 Tbs. of white vinegar with enough milk to equal 1 cup. Let it sit for 5 minutes before using. Other than that substitution, I made these as directed, and they were tasty!

Indonesian Satay

I wouldn't change a thing! Everyone loved this satay - from my 18 month old, to my 6 year old who eats nothing, to my satay-snob husband who "only eats the good stuff". I worried that there wasn't enough marinade for my huge bowl of cubed chicken, and I worried that 15 minutes wouldn't be long enough for a good marinade, but I am happy to say my worries were unfounded! I ended up marinating for an hour, and that was more than plenty of time. The chicken was flavorful, tender and moist - even without the peanut sauce, which was awesome too. GREAT recipe, thanks Estherlita!

Abstinence on the Beach

I really liked this mix, but I also really like grapefruit juice. My husband thinks this is a tad tart for him. I used ruby red grapefruit juice and a whole can of coconut milk. I also mixed this with raspberry flavored sparkling water for a yummy punch.

Slow Cooker Adobo Chicken

I haven't made this particular recipe yet, though it is very close to one given to me by a Filipino friend. After reading the reviews, I was confused by all the people adding sugar to this recipe. Adobo should have a pleasant salty/vinegary taste. The vinegar gets less intense as it simmers with the chicken. Adobo isn't supposed to have sugar! This isn't a recipe for teriyaki or sweet and sour. If that's the flavor you are after, you're better off trying a different recipe.

Potato Salmon Patties

I must have done something wrong because the patties I made were so dry and had that "stick to your throat" thing going on. Besides the texture, they tasted good, maybe I drained my salmon too well or something. I think I'm going to have to give this one another try. . .

Pizzelles III

These were really good! I haven't really had pizzelles before, but I was given a pizzelle iron recently so I thought I'd make some. We formed the cookies over an upside down bowl while they were really hot and then used them for ice cream bowls/cones. Everyone really liked them. I'm trying the chocolate version tonight.
