Seared Catfish Creole

i did creole seasoning instead of pepper; fillets- not whole fish; and oil only- no butter. i was surprised that we liked the mustard on the fish! my picky 7 year old wanted more and my hubby loved it too! had a good flavor- to me the mustard really added a lot of *good* flavor, so perhaps i was more generous with it than some other reviewers.

Slow Cooker Salisbury Steak

this was my first time to make salisbury steak and i was very impressed with how easy it was. i read other reviews and tips first, and since i didn't have all the exact ingredients, make a few substitutions and also cooked it on the stovetop rather than in the slow cooker and it still turned out great! i cut the recipe in half, using only half the onion soup packet. i didn't have the au jus or the cream soup, so instead i used a can of mushroom gravy and a dry packet of brown gravy (reduced sodium). since i forgot to half it and added the full packet of gravy mix i went ahead and added the full amount of water- so i had extra sauce which is never a bad thing! I also added fresh sliced mushrooms after browning the meat, when i added the gravies. Mine didn't turn out too salty the way i made it. thank you for such a versatile and delicious recipe :) it will be a new staple in our house!

Lazygirl's Ground Turkey Stroganoff

This has become a regular dinner in my home- we made it for the first time in Fall of 2009 and I've made it many times since then! It is often my go-to recipe when I don't know what to cook because I always have the ingredients on hand and my hubby and son rave about how good it is every time! I usually use wheat pasta and sometimes I leave the bouillon or onion out and it is still great. I will often use a larger can or double the cream or mushroom soup to stretch it a little further since we devour this dish! I've also passed this recipe onto a friend and her family loves it too! Thank so much!

Turkey Skillet Supper

I didn't have bell pepper or onion and we didn't top with sour cream or cheese and I used rotini pasta as I didn't have elbow macaroni- turned out great, very filling and easy to make. Also, I added some thyme, basil, and oregano. Everyone at my table was quite pleased. I was fairly generous with the chili powder, although I didn't measure it out, and it really did not make it too spicy at all. We will probably make this again- I am happy to find another skillet dish which calls for ground turkey and uses staple ingredients that I usually have on hand!

Herbed Lentils and Rice

This dish was a HIT with my hubby and my toddler son! We also did like someone else mentioned and used fewer lentils and more rice. We used brown minute rice because we had it on hand, but didn't adjust any of the cooking time or liquid and it came out great after cooking an hour and a half. We used vegetable and chicken broth. We did use a Mexican-cheese blend although I think it does not need the cheese. Very delicious and flavorful and I am so excited to find a non-soup lentil recipe that can work as the main course or a side dish that my family loves! Thank you!

Spinach Tortellini Soup

I made this with a 12 oz bag of spinach tortellini and a 3rd can of low-sodium chicken broth and used fresh spinach that i had on hand (not nearly as much as the recipe called for). I squeezed the juice from several lemon slices after reading a review which stated lemon pepper was 'the missing ingredient'. I sprinkled some minced dried onion instead of using fresh onion like some suggested. This was a huge hit with my hubby, but my 2 year-old wasn't that thrilled. I will most likely be making this again as I often keep tortellini on hand!
