Easy Quiche

I recently made this for the first time for a party of 8. Everyone raved about the quiche. It was very easy and quick. I substituted thawed spinach for the broccoli, as it would be less lumpy. I also used veggie sausage patties (Morningstar "Maple flavored" sausage patties"). Even the non-vegetarians LOVED it. This is a keeper!

Passover Double Chocolate Almond Torte

Absolutely delicious! I am not Jewish, but my daughter's boyfriend is. I was asked to see if I could do some nice options for Passover / Easter dinner. Made this with fresh whipped cream and Gelato, along with the chocolate sauce in the recipe. It was AMAZING! I will do this for any dessert occasion beyond Passover. I did have to take it out 6 minutes early from the oven. I halved the recipe and baked in a stick-free loaf pan. No leftovers. Everyone had seconds!

Chinese Chicken Salad III

This recipe is great, as is! I did use ready-made chow mein noodles to save time. I also typically grill chicken breasts in advance, then slice then, put a portion in snack-sized zip lock bags, then freeze them for use on salads later. I take a pkg out of freezer and put in microwave for 45-60 seconds when I want some for a salad. I also per-grate ginger and wrap 1 tsp portions in plastic wrap, then put them all in a labeled zip lock and when needed, I put a tsp pkg in microwave for 15 seconds. This way I also have access to fresh grated / chopped ginger without a lot of work. For the grated carrots, either grate last or sprinkle with lemon juice to slow down the oxidizing which causes them to go brown quickly after grating.

Lamb Chops with Balsamic Reduction

Amazing! I used for the Balsamic Vinegar 1/2 with regular supermarket balsamic vinegar and 1/2 Balsamic Glaze (also available at many grocery stores). At the end, I sprinkled a dash of dried mint leaves on top of the lamb. A great dish and certainly one to save and make again!

Diabetic Dog Treats

You can even make this more diabetic friendly by using Rye flour instead of wheat flour. Rye flour has much less gluten and is much slower in converting into sugar in the body. Rye flour is also more flavorful and dogs love it.

Juicy Roasted Chicken

I made this exactly as indicated (except that I didn't have celery so I made it w/o the celery). I turned up the oven to 375 degrees in convection mode to try to speed it up some. This roasted chicken recipe is AMAZING! I can't believe I'd stopped making roasted chicken myself since rotisserie chicken has become available at the grocery stores. This is SO much better. Great recipe!

Grilled Peaches and Cream

I've never had grilled peaches before but thought I'd try it cause I'm trying to find healthier options for dessert. I loved them. I did a variation though, as I had no cream cheese. I cut a nectarine in half and removed the pit. Sprayed both side lightly with olive oil, then grilled each side for 3 minutes. Removed nectarine and drizzled honey and a little cinnamon over them. Loved this dessert! (BTW, my nectarines were already ripe and juicy, so likely this helped.) After grilling them, they were quite soft but, oh SO good.

Scrambled Eggs Done Right

Simple and perfect! I made it exactly as the recipe indicated and the eggs were great! Best yet! Be careful at the cooking stage. Take them off the heat when they are still moist. Also, keep turning as you cook them.

Grilled Asparagus

Excellent! It is so simple that I thought it wouldn't be right. I have had a hard time getting asparagus right in the past. The key is the cooking time. This recipe said to grill for 3 minutes. I grilled for 5 minutes and it was perfect. I would say 3-5 minutes max grill time or you'll ruin it. (Note: I also sprinkled garlic powder on it before grilling along with what the recipe called for.)

Curried Chicken and Potatoes

Excellent dish! I doubled the spices. I also didn't have yogurt so I left that out. I did add 1/2 c. soy milk in it's stead. The dish was fabulous and will definitely make it again. My daughter loved it too!

Easy Meatloaf

Excellent! I agree with others to double the sauce. A lot of it caramelizes and cooks down, so the extra sauce is welcome. Also, line baking pan with non-stick foil completely or you will be scrubbing pan later. I also added 3 crushed cloves of garlic to mixture and oregano. I left off the milk but added 2 T heavy cream. Also, seasoned bread crumbs.

Thai Basil Rolls with Hoisin-Peanut Sauce

Excellent! I used avocado slices instead of noodles. Also put a dash of cayenne in the sauce and a bit more peanut butter & water. I used dried mint (a dash in each one) instead of fresh mint. I used Morningstar Sausage Links instead of the pork to make it faster and it was fantastic. Overall, it is time-consuming to put them together (but I tend to be a bit slow). I did it for 2 people and it took about 30 minutes to roll 7 of them. But well worth the time! I couldn't have rated it higher! I want them again tomorrow!!!

Tom Yum Koong Soup

Great soup! It is a light soup so you will want to eat something along with this if making for dinner. Also, I got the Tom Yum paste but it really bothers me that you cannot get it w/o MSG in the paste. This is very unhealthy. Next time I'll try to make it w/o the paste and hopefully will be good. Also start with peeled, cleaned shrimp as this process is time consuming.
