Scrambled Eggs Done Right

Simple and perfect! I made it exactly as the recipe indicated and the eggs were great! Best yet! Be careful at the cooking stage. Take them off the heat when they are still moist. Also, keep turning as you cook them.

Taco Salad I

Very good. I used less salad dressing and used Brianna's Poppy Seed dressing instead of French's dressing as they are both sweet and I didn't have the latter. I also used Morningstar Farms Veggie Crumbles instead of ground meat and it was delicious.

The Best Rolled Sugar Cookies

Great sugar cookie recipe. I found it a hassle to roll the dough out even with the tips on parchment paper. I decided to roll into 1.5 inch balls and then roll them out into round/oval cookies. This was much easier and faster. Then just use icing to make decorations. (The cookie cutter ones actually looked no better than the round ones after baking.)

Tom Yum Koong Soup

Great soup! It is a light soup so you will want to eat something along with this if making for dinner. Also, I got the Tom Yum paste but it really bothers me that you cannot get it w/o MSG in the paste. This is very unhealthy. Next time I'll try to make it w/o the paste and hopefully will be good. Also start with peeled, cleaned shrimp as this process is time consuming.

Thai Basil Rolls with Hoisin-Peanut Sauce

Excellent! I used avocado slices instead of noodles. Also put a dash of cayenne in the sauce and a bit more peanut butter & water. I used dried mint (a dash in each one) instead of fresh mint. I used Morningstar Sausage Links instead of the pork to make it faster and it was fantastic. Overall, it is time-consuming to put them together (but I tend to be a bit slow). I did it for 2 people and it took about 30 minutes to roll 7 of them. But well worth the time! I couldn't have rated it higher! I want them again tomorrow!!!

Best Marinara

Good basic sauce. Very basic and nice. I added fennel seeds and a couple tablespoons of half & half to bring down the acidity.

Grilled Asparagus

Excellent! It is so simple that I thought it wouldn't be right. I have had a hard time getting asparagus right in the past. The key is the cooking time. This recipe said to grill for 3 minutes. I grilled for 5 minutes and it was perfect. I would say 3-5 minutes max grill time or you'll ruin it. (Note: I also sprinkled garlic powder on it before grilling along with what the recipe called for.)

Honey Glazed Pea Pods and Carrots

Easy Quiche

I recently made this for the first time for a party of 8. Everyone raved about the quiche. It was very easy and quick. I substituted thawed spinach for the broccoli, as it would be less lumpy. I also used veggie sausage patties (Morningstar "Maple flavored" sausage patties"). Even the non-vegetarians LOVED it. This is a keeper!

Curried Chicken and Potatoes

Excellent dish! I doubled the spices. I also didn't have yogurt so I left that out. I did add 1/2 c. soy milk in it's stead. The dish was fabulous and will definitely make it again. My daughter loved it too!
