Colcannon

Reviewed: Mar. 18, 2014
This recipe was VERY bland on it's own. Also, the proportions of milk are wrong. I used 1 c as directed in the recipe and my dish was almost soup. I have to added some cooked oatmeal to firm it up some. Also, I REALLY had to doctor it up to make it good. I added a pouch of white gravy mix, lots of nutmeg (in place of mace), and Bragg's Liquid Aminos (which is a flavoring for many things). It tasted decent after doctoring it up but it was a bit unsightly as a mashed mess. It wasn't worth the large number of dishes it required to prepare it.

Best Toffee Ever - Super Easy

Reviewed: Jan. 3, 2014
Amazingly good and easy to make. You can half the recipe and make in a square baking pan if you don't want to store so much if it.

Easy Meatloaf

Reviewed: Nov. 4, 2013
Excellent! I agree with others to double the sauce. A lot of it caramelizes and cooks down, so the extra sauce is welcome. Also, line baking pan with non-stick foil completely or you will be scrubbing pan later. I also added 3 crushed cloves of garlic to mixture and oregano. I left off the milk but added 2 T heavy cream. Also, seasoned bread crumbs.

Hash Brown Quiche

Excellent! I used mushrooms and cilantro in addition to the onions. Also used veggie bacon instead. Added 1 extra egg too. It was delicious!

Passover Double Chocolate Almond Torte

Reviewed: Mar. 31, 2013
Absolutely delicious! I am not Jewish, but my daughter's boyfriend is. I was asked to see if I could do some nice options for Passover / Easter dinner. Made this with fresh whipped cream and Gelato, along with the chocolate sauce in the recipe. It was AMAZING! I will do this for any dessert occasion beyond Passover. I did have to take it out 6 minutes early from the oven. I halved the recipe and baked in a stick-free loaf pan. No leftovers. Everyone had seconds!

Chinese Chicken Salad III

Reviewed: Jun. 11, 2012
This recipe is great, as is! I did use ready-made chow mein noodles to save time. I also typically grill chicken breasts in advance, then slice then, put a portion in snack-sized zip lock bags, then freeze them for use on salads later. I take a pkg out of freezer and put in microwave for 45-60 seconds when I want some for a salad. I also per-grate ginger and wrap 1 tsp portions in plastic wrap, then put them all in a labeled zip lock and when needed, I put a tsp pkg in microwave for 15 seconds. This way I also have access to fresh grated / chopped ginger without a lot of work. For the grated carrots, either grate last or sprinkle with lemon juice to slow down the oxidizing which causes them to go brown quickly after grating.

Cuban-Style Yucca

Reviewed: Jun. 7, 2012
I really had to doctor this up til it tasted good. I used butter instead of oil. I also fried some onions with the garlic in the butter. I did also put about 1 T olive oil and some drops of sesame oil. I used a masher and smashed the cooked yucca as well. Had to cook the yucca for about 35 minutes. It did have some stringy fibers in the yucca which was not nice to feel as you ate the dish. Very stick to your ribs... A bit to a fault.

Lamb Chops with Balsamic Reduction

Reviewed: May 26, 2012
Amazing! I used for the Balsamic Vinegar 1/2 with regular supermarket balsamic vinegar and 1/2 Balsamic Glaze (also available at many grocery stores). At the end, I sprinkled a dash of dried mint leaves on top of the lamb. A great dish and certainly one to save and make again!

Jamie's Cranberry Spinach Salad

Reviewed: Apr. 24, 2012
I don't get it. I really didn't like the dressing. I did doctor it up significantly and then it really tasted good, but it took a lot of changes. Oh well, different bites for different likes.

Diabetic Dog Treats

Reviewed: Feb. 20, 2012
You can even make this more diabetic friendly by using Rye flour instead of wheat flour. Rye flour has much less gluten and is much slower in converting into sugar in the body. Rye flour is also more flavorful and dogs love it.

Baked Cod with Boursin Herb Cheese

Reviewed: Jan. 2, 2012
I was surprised that this was so good as Boursin cheese is not usually my thing. Someone had brought the cheese spread over for Xmas and there was extra so I searched for a recipe to use it up. Both myself and my husband agreed this dish was quite good. I made it exactly as written but used garlic powder on the fish.

Chicken Thighs Surprise

Reviewed: Sep. 26, 2011
It was good but a bit too liquidy for my taste. I used the recommended vegetables plus some fresh green beans. I like the green beans and the other veggies were good too, but the latter were a bit on the too soft side. I used Dubliner cheese instead of Swiss and was quite a nice flavor. This dish would be better I think with 1 can of cream of chicken soup (vs. 2) and no added chicken broth. (And less eggplant/squash and more green beans)

Juicy Roasted Chicken

Reviewed: Sep. 21, 2011
I made this exactly as indicated (except that I didn't have celery so I made it w/o the celery). I turned up the oven to 375 degrees in convection mode to try to speed it up some. This roasted chicken recipe is AMAZING! I can't believe I'd stopped making roasted chicken myself since rotisserie chicken has become available at the grocery stores. This is SO much better. Great recipe!

Shrimp and Sugar Snap Peas

Reviewed: Jul. 9, 2011
I was pleasantly surprised by this GREAT dish! I have a garden and had overload of snap peas and was tired of the same recipes. I saw this & thought I'd try it. It was SO good. I took the advice of others and added more garlic & salt. (I also added toasted sesame oil in place of hot oil and also added about 3T of nutritional yeast (a vegetarian substitute for a cheesy flavor). It was SO good. (I also cooked the liquid down with all the ingredients in it so that the flavor would caramelize.) This recipe is a definite keeper.

Grilled Peaches and Cream

Reviewed: Jul. 1, 2011
I've never had grilled peaches before but thought I'd try it cause I'm trying to find healthier options for dessert. I loved them. I did a variation though, as I had no cream cheese. I cut a nectarine in half and removed the pit. Sprayed both side lightly with olive oil, then grilled each side for 3 minutes. Removed nectarine and drizzled honey and a little cinnamon over them. Loved this dessert! (BTW, my nectarines were already ripe and juicy, so likely this helped.) After grilling them, they were quite soft but, oh SO good.

Lemon Lu Lu Cake

Reviewed: May 12, 2011
Excellent and moist! Not as good as Mother Myrick's Lemon LuLu but very good, nonetheless. I halved the glaze recipe and would also recommend mixing the lemon juice to two parts lemon juice and 1 part water. This will keep it snappy but not too tart.
