Eggplant -- Easy, Good and Tasty

This recipe is awesome! My first time ever cooking eggplant, and it turned out just fabulous. Simple, quick, and delicious dinner. My boyfriend ate 5 slices and said, "Are there more of these things somewhere?" Even my three-year-old son asked for more. Note: I did follow the suggestions to mix garlic in with the egg mixture and to flip the eggplant over 10 minutes through the baking cycle. Easy cheesy.

Banana Banana Bread

Loved this! I had only attempted to make banana bread before, and that recipe hadn't worked out so well--much too dry. This one was just right. I did throw in a few pecans, just because I like them. Otherwise, I followed the recipe exactly, took the bread out of the oven right at 60 minutes as it appeared to be done. Probably didn't wait long enough to slice it because my son and I were so anxious to try it. It was melt-in-your mouth good. Took half the loaf to work and my co-workers enjoyed it too. I will definitely use this recipe again.

No Bake Chocolate Oat Bars

Loooove these! They turned out wonderful. I did go ahead and increase the peanut butter to a full cup, and added some extra chocolate chips because all I had was a 9x13 pan. Also, I just like lots of chocolate and peanut butter. These remind me a lot of preacher cookies. Delicious! Can't wait to share with my friends.

Irish Cream Chocolate Cheesecake

Wonderful wonderful! I'm a big fan of cheesecake--always have been--and this is by far my favorite recipe thus far. I cheat and use a premade chocolate pie crust and end up with two cheesecakes. I'm not that concerned about cracking, as I generally cover that up with a bit of whipped cream and chocolate chips. Big hit at home and at work. Even my boyfriend who doesn't like sweets very much enjoys this cheesecake.

Popularity Cookies

Delicious! I was a tad bit skeptical about a cracker cookie, but after all the rave reviews, I figured it was worth the risk to at least try making them. I was right to do so! These were a hit at home and at work. My manager asked for the recipe and made them herself for her bridal shower. Will definitely make them again. (And I did skip the milk chocolate chips and just used extra semisweet chocolate chips--I prefer darker chocolates.)

Peanut Butter Fruit Dip

Looove this! I was looking for a relatively healthy yet satisfyingly sweet treat to help me avoid cravings for things that are terrible for me...and this dip really does the trick. It's delicious and quite healthy when made with lowfat yogurt, natural peanut butter, and fat free sugar free whipped cream. I've made it so many times that I don't even bother to measure the ingredients anymore. I add cinnamon to taste, and as I love cinnamon, it's probably at least double the recommended amount. I love this, my three-year-old son loves it, my friends enjoy it, and even my boyfriend who isn't crazy about sweets of any sort enjoys it. Great with fresh fruit and/or cinnamon graham crackers.

Sopapilla Cheesecake Pie

OMG amazing! I loved this, my parents loved it, my co-workers and friends loved it. And there was more than enough to go around (which just means that we all ate more than we should). Sooo delicious, so simple to make. I only used about 1/2 a cup of sugar in the filling and 1/4 cup in the glaze, as experience tells me that's usually plenty in a recipe of this sort. The honey and cinnamon are all the sweetness really needed. Already planning to make this again this weekend!

Quick and Easy Green Chile Chicken Enchilada Casserole

Loved this! It was fairly easy to make, though wee bit time consuming. Not that I mind--I like playing around in the kitchen. Took the advice of some other reviewers and mixed the sour cream with the chopped up chicken. Wouldn't make much sense to do it any other way. Also tore my tortillas into several pieces each and let them soak up the enchilada sauce in a pie pan, and only had a little left over to drizzle on top. I had a busy day ahead of me, so I assembled the casserole the night before, let it sit in the fridge overnight, then baked when we were ready for our Cinco de Mayo dinner celebration. Probably helped to allow the flavors to sit and the sauce to be thoroughly soaked up. Boyfriend said it could have used some more kick, but I liked it as is. If anything, I might recommend topping it with some spicy salsa. Very enjoyable. I'm already planning to make it again for a potluck this weekend.

Mexican Baked Fish

Boyfriend says, "This can go in the repertoire of things you bake on a regular basis." 'Nuff said there, as my boyfriend certainly doesn't suggest that I make things he doesn't like more than once. I love that this was both quick and easy to make. I love Mexican flavors, so I sprinkled the fish with some cilantro, cumin, chili powder, and a wee bit of garlic. Just to give it some extra kick. Very tasty. Will definitely make this again, perhaps with different types of fish also.

Bacon Cheddar Deviled Eggs

I thought these were pretty tasty. I've made them a couple of times now, along with my mom's usual recipe for deviled eggs. I think they're a nice change and provide some variety. It's good to have options, and I liked this as a variation on a favorite food.

Pumpkin Chocolate Chip Muffins

I thought these were pretty great. I also followed suggestions from previous reviewers and doubled some of the spices, and I also used brown sugar instead of white. I made these the night before and heated each one up for a good 15-20 seconds in the microwave the next morning. Cut them in two and put a little cream cheese on 'em...Mmmm!

Sausage Balls

They turned out alright for my first try. It was important to me to make sausage balls this year because my favorite grandmother used to make them every year around the holidays. She passed away in May, and I really wanted to get this right. Seems like it should be a simple enough recipe, but you definitely need to cook them a lot longer than ten minutes. I'd aim for 25 minutes to 35, depending on your oven. All in all, very tasty, though.

Pumpkin Chocolate Chip Cookies III

I LOVED these cookies. Various members of my family liked them more than others did, but some members of my family are pretty picky, and others just do not like sweets very much at all. I, however, thought these cookies were amazing. I prefer them fresh out of the oven, but they were also good after being refrigerated, and they held up pretty well just setting out in a ziploc bag, as well. I did follow some tips from other reviewers and used extra pumpkin pie seasonings and also used brown sugar instead of white. Excellent holiday treat!
