Garlicky Baked Butternut Squash

This tasted great and was so very easy to make. I didn't have any parsley, so I skipped that ingredient and added a few extra cloves of garlic. Since not specified, I included the parmesan with the other ingredients when tossing / coating the squash. I had a sirloin roast roasting in the oven so I just popped it in with that. It ended up in the oven for about an hour and 20 minutes at 350F. Maybe a little longer than it needed, as some of the edges were turning a little darker brown, but it was none the worse for wear and tasted great! I will definitely do it again.

Caramel Brownies II

I've made this several times now and it's quite the hit with my co-workers. I couldn't find german chocolate cake mix, and use Devil's Food instead. The brand does seem to make a difference. I used a store/no name type brand once and it wasn't as good as when I made it with Duncan Hines or Betty Crocker mixes. Didn't have a measuring scale for the individual caramels, counted out 40 individual squares instead. Omitted the nuts as there are some people with allergies and lastly completely forgot about the chocolate chips! LOL. Still excellent without the extra chocolate chips. It is very rich. And I like that they're easy to handle as squares, makes this excellent for packed lunches and picnics.

Eggplant Parmesan II

Wasn't sure I had done this right, but my husband exclaimed at the first bite! When I was making it, he seemed so disappointed there was no meat, but he loved the "eggplant lasagna". I didn't have any bread crumbs, Italian seasoned or otherwise. I made so with crushed Raisin bran (without the raisins) and crackers to make the crumb mix. Seasoned it with salt, pepper and dried basil. Since I did try to slice the eggplant as thin as I could, the 5 minutes per side was fine. No problems with the eggplant sticking to the pan. I have to admit, this cereal/cracker mix coated a lot better than I expected! I also tried sweating the eggplant with salt as some recipes suggested. I was very happy with the outcome!

Cream of Broccoli Soup I

Very good. Easy to make. Great way to use up the stalks of the broccoli. Blended those, chopped the florets. Halved the recipe since I didn't have enough broccoli and used 1% milk since that was all I had. But it thickened up beautifully and tasted great! The only awkward part was using a magic bullet to blend the broccoli. I had to keep pausing and reshaking the jar. Things went smoother when I added some of the milk / broth base into the bullet to blend. Will definitely make again!

Asparagus and Ham Casserole

Skipped the celery since my husband hates the stuff. Substituted cream of mushroom soup instead of the chicken and since I was using cream of mushroom soup, added sliced mushrooms. Also, didn't have any lemon pepper, but I sprinkled in some Mrs.Dash garlic herb seasoning. Last substitution, didn't have bread crumbs, but put cronions (crisp fried onion bits) on top. The crunch added a nice texture that put this over the top! Will make again!

Butterscotch Bread Pudding

One of our favorites. Make this whenever I have enough leftover bread for a batch. Don't always have butterscotch chips, but as an alternative, I put in coarsely grated apple (quicker than slicing it up) and add a bit of cinnamon and nutmeg spice to the mix. It's fantastic!

Banana Pancakes I

A family favorite. Recipe can easily be doubled or tripled. My parents freeze the leftovers and toast before eating. Great way to use up over ripe bananas.

Spinach Brownies

Added thinly sliced fresh mushrooms. Pan fried the onions, mushrooms in a little of the melted butter. Rather than mess yet another pan/pot, tossed the chopped spinach in with the onion / mushroom mix until wilted. Then made as per the recipe. Loved it!

Basil Pesto Pomodoro Sauce

Tasty and easy to prepare. Used olive oil instead of the non-stick cooking spray. I didn't have canned tomatoes, but roughly chopped up a couple of large ripe tomatoes instead. Tossed it with cooked linguine and added a side of salmon steak.

Super Duper Easy Apple Cake

The cake tasted great and smelled heavenly coming out of the oven. I added a little extra cinnamon and nutmeg as other reviewers had suggested. Rather than dicing the apples, I used a coarse grater, which I found to be much easier than dicing them! The cake was moist but a little on the crumbly side. But that may have been the cake mix I used. It only said to bake in a tube pan for 40 minutes. I was in a rush and didn't perform the toothpick test. I will definitely try it again, but bake it for longer next time. We still enjoyed mashing the crumbs together into cake balls to eat! If it's not crumbly the next time, I'll change my rating to 5 stars! This recipe felt like homemade!

Shrimp and Mushroom Linguini with Creamy Cheese Herb Sauce

Very easy to make. Tasted quite good. Took a few shortcuts. I didn't have any fresh mushrooms, so I used canned mushrooms at Step 3 and skipped Step 2 entirely. Didin't have the parsely either, just omitted it outright. I was a little concerned when it seemed I had melted butter with tiny pieces of fried cream cheese and garlic. But after the boiling water was added and stirring continuously, everything did eventually smooth out. I might try with a little less butter though.. I There seemed to have a lot left on our plates. Melted butter... sooo good, but soooo bad....
