Wasn't sure I had done this right, but my husband exclaimed at the first bite! When I was making it, he seemed so disappointed there was no meat, but he loved the "eggplant lasagna". I didn't have any bread crumbs, Italian seasoned or otherwise. I made so with crushed Raisin bran (without the raisins) and crackers to make the crumb mix. Seasoned it with salt, pepper and dried basil. Since I did try to slice the eggplant as thin as I could, the 5 minutes per side was fine. No problems with the eggplant sticking to the pan. I have to admit, this cereal/cracker mix coated a lot better than I expected! I also tried sweating the eggplant with salt as some recipes suggested. I was very happy with the outcome!
