Quinoa and Black Beans
I've had this twice now. The second time, it tasted bland to me and I couldn't figure out why. Then I finally remembered that the first time I had it, I added some fresh squeezed lime and put a big dollup of "Greek Gods" delicious greek yogurt on top. That added just the right amount of extra flavour! Yummy and healthy!

Delicious Stuffed Potato Pancakes
As written, I'd only give this a 3 out of 5. However, with a bit of spicing up -- perhaps following some or all of the suggestions of other reviewers -- it could bump up to a 4 or even a 5. I, too, wasn't sure if I should cook the beef, beforehand, or not. It seemed to me that it wouldn't cook by itself between the layers, so I decided to follow comments of other reviewers and assume that the beef was to be cooked.

Ginger Glazed Mahi Mahi
This was delicious. I made it exactly as the recipe, except used olive oil in place of vegetable oil. I used Costco frozen mahi mahi. Update November 15, 2010: Looks like they might have changed the recipe to use olive oil. I'm making it for the second time and I'm wondering if anyone has any other suggestions for what to serve this with. Last time, I used plain white rice. Tonight, I'm using brown rice with a bit of crushed red chile peppers. I have no idea what that will be like.
