Cajun Spice Mix

Wanting to make cajun potatoes on day my daughter realized we were out of the commercial jar of Cajun seasoning we had on hand. Not to be defeated by my lack of stock, I searched this sight for a spice mix. Lo and behold, this is the one for us. We had all the ingredients in the cupboard. I give it five stars just because the recipe is so easy to put together. My daughter who is learning the joy of putting ingredients together to make something better than take away was very impressed with the ease and the taste as well. Thank you, Bobbie Jean.

Roast Sticky Chicken-Rotisserie Style

I love me some rotisserie chicken. This is the second time I made this. It's absolutely marvelous. I left the marinaded chicken in the fridge for over 36 hours and baked it at 250 for 4.5 hours. Baked some herbed baby potatoes and carrots. Made basmati and vegetable rice in the rice cooker and had wonderful Mother's Day brunch.

Buttermilk Mango-Berry Crumb Cake

I was looking for a recipe to use up some of the buttermilk I have. After looking over many, this is the one that made my mouth water so I had to make it. And everything was in my fridge, freezer, pantry or fruit bowl. I used frozen raspberries. This is crazy good. I'm taking the rest of it to my sisters house for cinco de mayo gathering. Thank you Naples.....for this recipe.

Creamed Salmon on Toast

This is my first time eating this. It's absolutely wonderful. On suggestion from other viewers, I sautéed onion, celery and parsley in butter/olive oil combo. Dellliiiisshhh.

Corn and Egg Flower Soup

I've made this many times. Each time I decorate my soup bowl with a wedge of lemon and chopped cilantro. I find the soup is too sweet for my Bangladeshi-American taste buds. I only have large eggs so I use two. Other than that it is excellent. My three years old loves corn. I made it in her honor today.

Sausage Egg Muffins

I am giving my version only 4 stars. here is why: Just made these this morning. I was looking for such a easy recipe. I had to adjust ingredients according to what I had on hand. I am on low cholesterol diet as well as diabetic diet. I used 9 egg whites and 3 whole eggs. Used my home made Italian sausage. Added jarred jalapeño because that was in the fridge. I wanted some vegetable so added yellow and orange sweet peppers. I would've put some cilantro if I had that but used celery leaves instead which I think contributed to the bitter taste. I also put in some shredded cheddar and mozzarella.Llow fat, of course. I'll nix the celery leaves next time. All in all it is a very excellent basic recipe. My toddler loved it as well. Thank you for the recipe.

Italian Style Sausage

Now that i'm trying to cut down on salt, fat and preservative I search for recipes for much craved ready to cook foods. After reading some of the recipes here for homemade sausages, I've decided to try this one. Love love loved it. I made it with half beef and half chicken. Only other thing I did was added ground cloves and allspice. It is one of the best I've tasted. Next batch I'll add some oil to the mixture because this batch was little dry do to the fact that the ground meats I had on hand was very lean. Otherwise excellent recipe. Thanks.

Cha Cha's White Chicken Chili

I had to make adjustment on the ingredients according to what was in the pantry. I used fresh green chile peppers (seeded). Didn't have oregano so used Italian seasoning mix. No jalapeno. Had boiled ground chicken. All in all it was very good. Thank you for the recipe.

Nutty Popcorn Party Mix

OMG. That's how good this is. I didn't have macadamia so I just used extra peanuts (salted) and almonds. I wish I had read the reviews before mixing. The unpopped kernels are a nuisance. Otherwise very very yummy. I'm taking some to my girlfriends house tonight. Maybe. If I can stop eating it. Thanks for the recipe.

Best Steak Marinade in Existence

OMG. This was great. We threw a family BBQ the other day at which we cooked steak for the first time. After searching for marinade on this site, I decided to go with one that lot of ppl have tried and loved. Boy, am I glad I did. I didn't change anything. I let the steaks marinade overnight because we love lot of flavors in our meat. This was one great BBQ because of the great marinade. My brother, the BBQ expert of our family loved it. Cajun Style Baked Sweet Potato

I cubed the potatoes on suggestions from other members. The pieces weren't uniform so they didn't cook well. But cooked ones tasted great and the semi-cooked ones were ok, too. I did't add sugar because I'm diabetic. This is a good recipe. Thanks to the submitter.

Hot and Sour Chicken Soup

Very good. I added green chile peppers instead of red flakes. I like fresh pepper more than flakes. I had some leftover rotisserie chicken from another time so I used that. This will be another staple soup recipe in my house and for soup parties. Thanks for the recipe. Very good.

Mushroom Rice

If you saute rice in butter/oil with garlic, ginger and onion before adding the liquid, it will not be bland. Add salt as well. I made this today and it was good. After reading some of the reviews I tweaked it a little. I always saute rice in oil, butter or ghee ( clarified butter) with onion, garlic and ginger before adding liquid. This time I wanted to stay somewhat true to the recipe so I didn't add ginger. I put couple drops of sesame oil. Only because the bottle was on the counter. I did add 1/2 cup of carrot and 1/4 cup of peas for color. It was very good. My picky daughter ate it as well. Next time I'll add chicken and a fragrant rice. Like jasmine or basmati rice.

Greek Lemon Chicken Soup

I love Greek food. I've made this soup twice only. Loved it both times. My husband doesn't like creamy soups at all. I had a very hard time convincing him of the fact that the soup is a flour base soup with lemon. No cream. He liked it once he tried it. Thanks for the recipe.

Eggplant Croquettes

First of all let me start by saying this is an excellent dish. I have eggplants in my garden and now that it's almost harvest time, I had to look for ways to use this in recipes. I had to make some adjustments to the recipe. I didn't use chesse because my sister can't eat cheese. I didn't have bread or bread crumbs so I used cornmeal. I dry roasted the cornmeal with Italian seasoning, garlic powder and onion powder. I used cilantro and green hot chili pepper to taste (read lot) from my garden. I took the advice from another reviewer and baked them in 350 degree oven for 23 minutes because I wanted them to be little bit crunchy. I hate altering any recipe but I wanted to share my first crop of eggplant with my sister. Next time I'll make it according to this recipe exactly and post a review as well.
