Pop's Dill Pickles

This is a really nice and adaptable pickle recipe. I had 14 3-4 pickling cukes from a friend and ended up with 4 pints of spears and two pints of chips. I used my v-slicer to cut the chips. I didn't bother with the cheesecloth because I like the way it looks to have the spices floating in the jar. I only used 1/4 cup of sugar because we don't really like sweet pickles, and I added a sprinkle of red pepper flakes for fun. I just used kosher salt because that's what I had. Next time I'm going to pop a few grape leaves in the jars too. The pickles are delicious, and it was fun to experiment with canning.

Pumpkin Ginger Cupcakes

I made this recipe EXACTLY as described but made mini-muffins instead. They are moist but light at the same time and absolutely delicious. There are a couple of odd things about the way the recipe is written, though. First of all, you probably won't see that butter mixture change color. Just beat until completely incorporated. Also, you won't be POURING the batter into baking cups but spooning it. It's really thick. Fill the mini cups just a little over 1/2 full. I ended up with 80 mini cakes and baked them for about 15 minutes instead of 20 - check with a cake tester.

Kid-Friendly Wheat Bread

My goal this year is to bake with yeast and make bread. This was my second attempt - the first ended up in the trash. This recipe was just what I was looking for as I wanted to use my mixer. I made it exactly as listed, and it was perfect. I did have to let it rise for longer, but that always depends on where you're rising it and how warm the spot is. I rise under a kitchen under-cabinet light. The bread is soft and not very dense. I will make this bread again but throw in some flax seeds, cracked wheat etc. Thanks for listing this perfect, basic wheat bread recipe.

Chocolate Snaps

I LOVE these cookies - they are just the right bit of chocolate for a cookie tray. This cookie looks just like a ginger snap - not puffy at all like the other snaps that are made with baking chocolate. Don't change a thing, but I leave mine in for 12 minutes or so. Thanks Carmela!

Grilled Marinated Shrimp

Wonderful recipe I have made twice in a week, once with shrimp and once with boneless chicken breasts. I didn't worry about adding the lemon juice right before grilling, and instead of skewering them I just tossed them in a grill basket. The chicken stayed really juicy - we grilled it on medium direct heat for 10 minutes each side. The only alteration I made was to delete the salt entirely as I used really strong dark soy sauce. Thanks - definitely a keeper.
