German Coleslaw

Reviewed: Sep. 11, 2009
I made this for 14 people at my bbq. Because my dh is German I add chopped bacon and the bacon grease but reduced the oil (for the sake of our health, lol). Everyone loved it so much that I had none left over. Will be making this often.

Potluck Pasta Soup

Reviewed: Jan. 29, 2010
I use to cook for an Italian franchise restaurant and my boss asked me if I could dupicate the expense frozen Fagioli soup they made us use. This reciepe is almost exactly the same as mine. I use beef soup base instead of Onion and dry kidney and navy beans which I boiled and soaked over night. No green pepper but a big handful of chili powder. We cooked it for a lot longer than an hour and it is even better the next day. Sadly, the franchise stole my recipe and gave it to all their restaurant without giving me so much as a thank you. Good for you for figuring it out yourself!

Mock Pot Roast

Reviewed: Jan. 26, 2011
I have been making this for over 30 years. Now there is only the two of us it is easy to 1/2 the recipe. You can substitute bread crumbs for the oats but you get a slightly differant texture. Pearl onion are a pain so I use regular. Would have given 5 stars but you forgot to make gravy out of the pan juices !

Cauliflower and Broccoli Bake

Reviewed: Oct. 21, 2009
As written it is 1 star but reduce the milk by 1 cup and use extra old cheddar it is 4 stars. I accidently added to much red pepper and it was very spicy but no one complained.

Easy Batter Fruit Cobbler

Reviewed: Feb. 21, 2010
This is the recipe for what the Menonites call Fruit Batter. It is just missing 1/2 teaspoon of almond extract. It really is not the best dessert but it is the easiest. And it tastes ok. Good one to help teach little kids to cook.

Creamy Mushroom Risotto

Reviewed: Aug. 30, 2009
This is not risotto. Risotto does not contain any cream. It is "creamy" in texture because of the starch in the rice which is drawn into the liquid due to the cooking method. That being said if you take all these ingredients and throw them into a cassarole dish and bake it in the oven you have a very nice and easy dish. Don't waste expensive rice on this though. Just use regular long grain rice.

Stuffed Breast of Veal

Reviewed: Sep. 24, 2011
for those who mentioned bone it should have stated that the veal should have been boneless. I find the oven temp of 400deg for 3 1/2 hours too high. then another 1/2 hour !!! Reduce temp to 325 after 1/2 hour. you will get better results.

Stuffed Baby Yorkies

Reviewed: Jun. 14, 2010
I strongly recommend finding a yorkshire pud recipe that uses less eggs, and lets the batter rest long enough for the flour to blend better with the liquids. Way too eggy

Mushroom Risotto

Reviewed: Jan. 15, 2011
this is not rissotto. Is is a nice mushroom rice but real rissoto does not contain milk. The creaminess comes from the starch in the rice.

Roast Sticky Chicken-Rotisserie Style

Reviewed: Apr. 4, 2011
Can't beleive this got so many rave reviews. I worked in resturants where we cook rostisserie chicken and they never were cook for more than 45 min. 5 hours of cooking just dried out the poor thing and it is way too salty. Oh well, i guess every one has dif taste buds. It you really want it resturant style do not use a 4 pound bird. We use much smaller birds in resturants. and cook faster aand higher.
