Roasted Pear Mango Chutney

Reviewed: Oct. 12, 2009
I made this on firday and served it as the alternative to cranberry sauce for thanksgiving dinner yesterday. It was fantastic, tasted great with poultry. About about to share the recipe on facebook now at the insistance of my guests . I folowed the recipe pretty closely except that I used 1/2 cup cider vinegar and 1/4 cup white wine vinegar and i used rasins instead of dried cherries.

Roast Turkey With Tasty Chestnut Stuffing

Reviewed: Oct. 12, 2009
The stuffing was very tasty, but too much bread crumbs and not enough other stuff. If i make this again in future i'll definitely add some fresh fruit (apples, pears).

Tahini-Battered Tofu

Reviewed: Sep. 8, 2009
I was intrigued by this concept despite the many negative reviews it received. I decided to give it a try with a few modifications. I used about 6 table spoons tahini instead of 4. I used 2 whole eggs instead of whites only. I used a table spoon of oyster sauce as well as soy. I used up some corriander we had in the fridge. I cut the amount of liquid by half and cut the water with a generous amount of balsamic vinegar. I used white flour since this was what we had on hand. I also added some salt and red chili flakes. I dipped thin slices of extra firm tofu in the batter, leaving some in the bowl. Half way through baking, I poured on the rest of the batter. I baked for 20 minutes at 400 degrees. My partner and I thought this version tasted great.

Tahini Cookies

Reviewed: Dec. 19, 2010
Great healthy alternative. I replaced some of the honey with maple syrup, roughly 2 parts honey to 1 part syrup. When I added the 1st cup of oats, the mix looked very dry. This could be because I was using homemade tahini which turned out dryer than the store-bought kind. I added a bit more maple syrup and olive oil till the mixture looked more like batter. I also added 1/2 tsp nutmeg and a pinch of salt. I also feel the yield is closer to 2 rather than 3 dozen.

Mexican Mole Sauce

Reviewed: May 18, 2010
I don't think I would have liked this with tomato soup but I used crushed tomatoes instead and it was delicious. I also used 2 1/2 squares of baker's chocolate instead of cocoa powder

Perfect St. Patrick's Day Cake

Reviewed: Jun. 1, 2014
I made this for y girlfriend's birthday party and it was a big hit. I increased the frosting recipe by 1 1/2 to frost middle, top and sides and that was the perfect amount. I will cut the ganache recipe in half next time.

Pasta With Veggies In a Tahini and Yogurt Sauce

Reviewed: Dec. 14, 2010
Pretty good, nice change of pace from the usual pasta sauces. I didn't have pepper sauce so I left it out but will make sure to add it if I make this again in future, could have used the kick. Also, based on other reviews, I eliminated the water from the sauce completely and used a bit of water to keep the veggies moist during sauteeing. The sauce had a great consistency without water.

Tiramisu II

Just made this for the first time and served to a couple of dinner guests. Went over to rave reviews. I would add fifty percent more of the coffee/rum. an extra eight cup of coffee and and extra table spoon of rum.

Oatmeal Molasses Bread

Reviewed: Jan. 29, 2011
Delicious but very sweet. I made this for a 2nd time and used 2 1/4 tsp of dry active yeast. The top of the loaf was flat. I'll use 2 tsp of yeast next time instead. The bread is still quite tasty, if not as pretty as usual.

Caroline's Chocolate Fudge Frosting

This frosting recipe definitely has potential. It needs quite a bit of time to set so next time I will make this the day before I want to frost a cake. I will also try using less milk as suggested by other reviewers.

Savory Dijon Stuffing

Reviewed: Oct. 24, 2010
Excellent! except next time I would reduce the bread crumbs by 1/2 cup - 1 cup and add at least twice the amount of water chestnuts. I would also increase the walnuts, but of course that's personal taste. Also, since I dislike celery, I substituted with leeks, tasted great.
