Gobi Aloo (Indian Style Cauliflower with Potatoes)

I made this according to the directions, but it seemed so dry... I added a small can of coconut milk and a diced tomatoe at the end of the cook time, and then simmered an additional 8 minutes or so. The result was delicious! I think the tomatoe and coconut milk should really be included in the recipe. Also, I used curry and a small amount of cumin instead of tumeric.

Brown Sugar Biscuits

I made this recipe vegan by substituting soy milk and vegan margarine for milk and butter... these substitutions may be the reason that these turned out so DRY... Even with the dryness, they were eaten pretty quickly, especially when covered in an icing made of soymilk, vanilla and 10X sugar!

Baked Spaghetti Squash Lasagna Style

This is a wonderful recipe... something really different. I used vegan mozzerella cheese and no parmesan to make a dairy-free dish. A+, I'll make this over and over.

Oatmeal Chocolate Chip Pancakes

These pancakes were very heavy and rich, but the overall taste was OK. I thought there was a very strong baking powder aftertaste, so I suggest using a non-aluminum baking powder. My boyfriend liked them more than I did, so I'll probably make them again. I think I may add some sugar to the mix and use less choco. chips and see how that goes.

Easy Alfredo Sauce I

This sauce was very bland. I also had trouble getting a smooth consistancy, even with freshly grated parmesan cheese. I've made creamy cheese sauces before with no problem. I'm not sure what happened here. I won't make this sauce again.

Asian Coleslaw

This was unusual and delicious, I served it as a side dish with mu shu veggies and it was a hit. Beware, though, this recipe makes about 2 quarts of slaw! Next time, I'll half it as it does not taste so great after day 2.

Banana Crepes

I made the vegan crepes also on this website and just used this recipe for the topping. Instead of butter and cream, I used vegan margerine and soymilk (thickened a bit with some flour). What a meal!!! It turned out deliciously! I only had two bananas, so I sliced them into disks rather than slicing lengthwise. This will become a saturday special around our house!

Coconut Curry Tofu

I liked the way this turned out. However, the curry was very mild, and I would have enjoyed more spice overall. Next time I will add some hot pepper perhaps. I will make this again for sure!! **NOTE: I used regular napa cabbage rather than bok choy the second time I made it, and the texture was fabulous!

Basic Flaky Pie Crust

I made this recipe with a combination of vegan margarine and vegan vegetable shortening. It works very well. This is a nice, light crust perfect for apple, pumpkin, and other fruit pies. (Also works well for bean pie!)

Vegan Crepes

This is about as good as crepes can get without eggs. I had some trouble at first flipping the crepes, however, I found that using a very thin spatula, I could sort of loosen the crepe around its perimeter and then flip it without it sticking. I also found that the longer the batter sits in the fridge, the easier the crepes are to turn (don't know why...). I make the batter on friday night so saturday morning breakfast/brunch is a snap!

Sukhothai Pad Thai

This was the first Thai dish that I have ever made that came even close to tasting authentic. I used tamarind concentrate that I found at an asian market. I couldn't find any ground oriental radish (daikon) so I used 1 1/2 tsp of Thai seasoning (from the grocery store) instead. I used a pound of tofu and omitted the eggs and used turbinado sugar to vegan-ize this recipe. Even with all of the substitutions, the dish turned out very well. It was even great the next day for lunch! ** NOTE: I've found that cooking the noodles according to package directions, and then adding the cooked noodles to the pan works best. Next time, I think I'll add some mushrooms, broccoli and carrots just to give it a bit more flavor and texture (without eggs it lacks some variety). I highly recommend this easy and versatile recipe! Be sure to use a BIG wok or skillet!!

This was really great. I made it before I went to work, and dinner was waiting when I got home! I added about a quarter of a diced purple onion, and I didn't have any fresh basil, so I used 1 tbsp. dried crushed basil and it was still delicious. I think I'll reduce the oil next time, but still a definite keeper. Thanks!

Burrito Pie

I made this dish vegan... using some whole kidney beans seasoned with salt, pepper and cumin instead of meat. I reduced the refried beans to only one can, and used soy cheese instead of colby. It turned out really well, though next time I will be adding jalepenos as found that it wasn't spicy enough for my boyfriend and I. Overall, a great recipe that was easy to adapt to vegan.
