Grama's Peppery Parsnips

Never had parsnips before...well, knowingly anyway. 1st attempt, took reviewer's advice & cut the parsnips into coins & microwaved them before frying. I overcooked them & they were too mushy to crisp up in the frying pan. Yuk! But totally MY fault. I decided to give it another go (after the bad cooking memory faded with the family enough for them to at least TRY them again), this time making sure they were still firm before the fry step. What a difference! Super tasty, carmelized, addictive, and I have redeemed myself from the Great Parsnip Debacle. Now a staple in our regular rotation. Thanks for a great, simple recipe (I somehow managed to mess up) that got us to try a new veggie. (even if it is fried yummy goodness, lol)

Baked Asparagus with Balsamic Butter Sauce

Very good recipe, BUT switch the measurements on the soy & balsamic (1 tsp soy to 1 TBSP balsamic) or it's Baked Asparagus with Soy Butter Sauce. Definitely brown the butter or margarine (just cook over med-hi heat and stir constantly until your arm falls off & it browns slightly). Also, double the sauce as it's delish!

Jalapeno Popper Cups

2 peppers was just a tad too spicy for me, even without using the hot pepper sauce, but hubby thought them perfect. They disappeared quickly! I will make again, but a double batch, less peppers & no hot sauce in one batch for me & the recipe exactly as stated for the hot hubby! I did eat two...so they are yummy. Piping the mixture in using a corner-cut baggy was key in not breaking the mini cups. I baked them first for about 5 mins, piped the mix in, then baked again another 5 mins. They were good at room temp & not at all soggy.

The Best Banana Bread

It is the best banana bread.....with a bit of tweeking: 1/2 brown & 1/2 white sugar, splash of vanilla extract, walnuts. Excellent starter recipe to suit to your tastes though.

Sirloin Sandwiches

Delicious!!! However, the prep & cook times are not accurate. Following the recipe exactly it takes over TWO DAYS to make. Refrigerating the roast a second night after cooking seemed pointless. I marinated overnight (used apple juice) & grilled mid-afternoon next day. Sat the roast out until cooled and served that same evening. I didn't add the meat to the au jus to warm it as I wanted to keep the meat pink. Instead I just made a sandwich (room temp) and used the warm au jus to dip. As I stated in the beginning....Delicious!!!

Flavorful Flounder

This stuff is Da Bomb!!! The only thing I do differently is to paint the flounder with lemon juice & immediately add the cheese mixture rather than wait till the end. Then I top with a generous coat of Panko bread crumbs (they have to be PANKO or Japanese bread crumbs, regular bread crumbs are NOT the same). If it's not grilling season, bake on a tinfoil covered cookie sheet prepped with some Pam spray for about 15 mins @ 400. Broil for about a minute at the end to crisp up the crumbs if necessary. It's in a regular rotation at our house.

Sausage-Stuffed French Loaf

Skipped the ground beef & used a whole lb of bulk pork sausage (HOT!!! - or mild & add crushed red pepper flakes), also added caraway seed. Stuffed the mix into hollowed out Schwans prebaked frozen french loaves. (I feed the birds with the bread removed rather than put it in the mix, this also eliminates the need for a food processor/blender.) Delish, quick, & easy.

Ginger Glazed Mahi Mahi

Excellent exactly as presented. Also equally amazing baked @ 400 degrees for 20 mins or grilled. Double the sauce & boil for serving over fish or rice. Great on ANY fish!
