Boston Cream Pie Minis

These were a big hit for my daughter's birthday, especially since there were left-overs she could take to camp! I will say that the use of the boxed cake mix made them a tad disappointing to me. Next time, I'll add some pudding mix and vanilla to the cake mix.

Rhubarb Pork Chop Bake

The only reason I didn't give this 5 starts was that it is unappealing to look at, the rhubarb cooks up brown and isn't very attractive. BUT the flavor is great, the porkchops stay nice and moist, and it's easy to make. Great way to use up all that rhubarb other than in some kind of dessert. Will be keeping this in my winter repetoire too to use up all the chopped rhubarb in my freezer.

Avocado, Tomato and Mango Salsa

Amazingly refreshing and delicious! I had it at a potluck at work and then made a double batch at home --half to serve with grilled chicken and half to bring to a family cookout. Well, my husband liked it so much, he finished off the whole bowl, so I had to make another batch for the cookout -- it was just as popular there, none left for me, so I made a third batch when I got home. So versatile and so easy! And if, you don't like cilantro (I don't), substitute fresh parsley, just as delicious!

Almond Apricot Bars

A quick addition to my previous review: some reviewers report trouble cutting them. Here's what works for me: refrigerate for at least an hour, then use your pizza cutter (the wheeled one) to cut. They will come out with clean lines and a beautiful presentation.

Chocolate Zucchini Cake I

Delicious! Perfect for teacher Christmas gifts. We made 4 cakes and just divided the bater into 4 sections! You still have a little batter to make yourself 1 or 2!Easy to make! AAAAWWWWWEEEEESSSSSOOOOMMMMMEEEEE !!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!

Delicious Ham and Potato Soup

A Simply Perfect Roast Turkey

Simply the best turkey ever, even if you aren't a total turkey lover. Moist, flavorful and a beautiful browned skin. The drippings make awesome gravey as well, so it's a double winner.

Fennel Soup

Oh, my! I'm pretty sure they serve this soup in heaven, that's how good it is! Per other reviewers, I added some diced potato and pureed the soup before serving. Also, I double the recipe, but kept the butter amount the same and it was still rich and delicious! Finally, instead of the onion powder suggested by some, I sauteed some green onion tops with the fennel instead. This has been added to our Thanksgiving menu for this year, yum!

Strawberry/Rhubarb Crumb Pie

So easy and so good! Made it for a Harvest Supper and it was the first pie finished off! My family is begging for another one. Used frozen strawberries and rhubarb from this summer's garden and it came out great. I did add a tablespoon of cornstarch, per the other reviewers' suggestion,and it came out just right, moist and not overly juicy.

Simple Garlic and Basil Pesto

A good starter recipe, though I found it bland, having left out the chili powder, which my family doesn't like. To brighten the flavor, I added some fresh lemon juice and some sea salt. Then, it was awesome! I doubled the recipe and froze quite a bit for winter.

Zucchini Cornbread Casserole

Looking for ways to use up zucchini from the garden, so tried this based on earlier reviews. Definitely squeeze the water from the zucchini, messy but worth the extra step, gave the casserole a nice firm texture. Used Jiffy corn bread mix, as that's what I had on hand, and added a couple of teaspoons of seasoned salt. Put 3/4 of the cheese in the mix and added the last 1/4 to the top only during the last 10 minutes. My husband and kids LOVED it, and it made a nice big amount to last two meals. I found it a bit sweet and will try it with a non-sugar corn bread mix next time, maybe even add some fresh dill.

Rhubarb Strawberry Jam

So easy, so awesome! Had rhubarb coming out of my ears and this recipe solved two problems: what to do with the rhubard and what to give for teacher gifts. Gave it to my two daughters' school teachers and dance teachers and everyone loved it. Even my mother-in-law, who is a cook and a canner, raved!

Rhubarb Coffee Cake

Made this when my husband needed to bring breakfast to work -- I received emails from his co-workers RAVING about this cake. The only change I made was to use almonds instead of walnuts, since that's what I had. It's moist, delicious, and very rich.
