Amazing Pecan Coffee Cake

This coffee cake is AMAZING. I rarely give any recipe 5 stars, but this one deserves it. So moist & buttery. I did use one tablespoon of almond extract & everyone who tasted it agreed that they would use almond instead of vanilla. I am thinking about making muffins or putting it in a bundt pan as others suggested. I did not use the foil, just greased the pan & cut it out of the pan as we ate it.

Sweet Corn Muffins

The taste was good, I used cupcake liners & would not recommend that. They stuck to the liners, so definitely heavily grease cup cake tins. The flavor was sweet, but I think I will increase the salt to 1 teaspoon. The creamed corn was a nice touch. They do not rise much so fill almost to the top of the tin.

Pizzelles II

Followed recipe to a T & they turned out really nice. I used my medium Pampered Chef scoop & I placed dough slightly above center. I cooked mine for 1 minute 15 seconds. They were turning out too dark if I kept them in until there was no more steam. The texture is crispy, but I live in Western Colorado where the climate is desert so no problems with humidity softening up the cookies. I am going to make another batch with almond extract. I got 44 cookies using the medium scoop.

Pumpkin and Sausage Soup

Pretty good soup recipe - sweet & spicy. I sauteed the onions with the sausage in 1 Tablespoon of butter. I used 1 and a half cans of pureed pumpkin & 32 ounces of low sodium chicken broth. I didn't have any praline liquer so substituted brandy. I used my immersion blender to blend it all up & then added the cream. Might try it with sage sausage or maple sausage for a different twist.

Brazilian Fish Stew

This stew is pretty good. I did swap out 2 peppers for 2 diced zucchini. My husband added hot sauce for a kick & I only added the cilantro to mine after I served it. The lime flavor was not strong at all. I may add a little lime juice to mine when I serve it. Also, I used flounder as it is a firmer fish & I was afraid tilapia would have disintigrated. Good basic recipe & easily modified for individual tastes.

Southern Fried Cabbage

I used red cabbage instead of green cabbage. I cooked 4 strips of bacon until they were super crispy & set them aside. I sauteed the onion & cabbage in the bacon drippings with salt & pepper until wilted & slightly carmelized. Once done cooking, I crumbled the bacon & added it to the cabbage & onions. Really good. I omitted the sugar as the cabbage is a bit sweet on its own. I will make this often.

Apple, Carrot, Or Zucchini Cake

Love this cake. I made it with shredded zucchini but can't wait to try it with apple or carrot. I made it in 2 8x8 pans & frosted it with homemade cream cheese frosting - delish. I gave one to a friend & she LOVED it. The cake is not very sweet so the cream cheese frosting is a nice touch. I am sure it would make a good quick bread or muffins, too.

Basic Microwave Risotto

This is unbelievably good & super easy. I've made it 4 times now & it has turned out perfectly each time even though I've added different things every time I've made it. The main change I made is to use low sodium chicken broth in place of vegetable broth & I've used either water or wine depending what I've had on hand. Once I added a jar of olive tampanade, another time I added sauteed mushrooms & tonight I added sauteed mushrooms & spinach. It is so versatile. Dare to be creative & add what you like. I would even make it for company - it is that good!

Chicken with Lemon Sauce

This was really good. I only used one egg & was able to bread 4 chicken breast halves. I served it with rice & green beans & a nice Pinot Grigio. Would be good with mashed potatoes, too. I would even make just the chicken without the gravy.

Swedish Meatballs (Svenska Kottbullar)

I only made the meatballs from this recipe, not the gravy. I also used groung turkey rather than beef & pork. That said, it's the spices that really make this recipe. I was afraid the meatballs would taste "odd" using spices usully reserved for baked goods, but it's actually really good. After baking the meatballs, I put them in a covered casserole with a can of cream of chicken & a can of cream of mushroom soup with some milk to make a gravy. I baked them for about 40 minutes & then served over egg noodles. Yum!

Terrific Turkey Chili

I don't usually like chili, but I LOVE this one. It's more of a taco chili than a regular chili. I did not add the zucchini, though, as it sounded like a weird vegetable to add to chili. My husband agreed. I did add one can of pinto beans as that seems more chili like than zucchini. I used low sodium beef broth & found the chili plenty salty. I also left out the chili flakes & used hot salsa instead. I will definitely be making this chili again.

Sesame Pork Tenderloin

My husband & I liked this. I used low sodium soy sauce & fresh ginger. I also increased the garlic to three cloves. I toasted the sesame seeds in a small frying pan until they were golden & aromatic. I marinated it for about 7 hours, but it would have been better if marinated longer.

Italian Herb Bread I

Delicious! I made this to serve with soup & it is one of the best breads I've ever made. I used my bread machine, so I halved the recipe & it turned out perfectly. Even my kids (who are picky eaters) loved it.

Tiramisu II

This is one of my favorite desserts, but I've made modifications. First, I double the amount of coffee & rum. I also double the amount of vanilla in the whipped cream & I sprinkle cocoa on both layers. There is a reason this recipe gets 5 stars. It is DIVINE!

Pineapple Banana Bread

This bread is really good, but sweet. It's more like a cake than a bread. I may make a cake out of it & frost with cream cheese frosting. I used 5 bananas. (When they start to turn brown I freeze them & thaw as needed.) I want to add coconut next time & maybe nuts, too. The recipe lends itself to replacing at least some of the oil with applesauce. Recipe is delicious as written but you can have fun experimenting to your taste, too.

Blueberry Pie

This is the most simple & delicious pie. I used fresh blueberries & served it with Lemon Ice Cream (also on this site). I made it for a friend's 40th birthday as this is her favorite kind of pie. It was devoured. Not too sweet & not too runny since I used fresh berries. I don't even like blueberry pie, but LOVE this pie.

Sugar Cookie Drops

These are good, but something is missing. I used 2 teaspoons almond extract & added a teaspoon of salt as others suggested. I skipped rolling them in sugar & added a bag of M&M's. I flattened them a little with my fingertips. The texture is melt in your mouth buttery, but I think they may need a tiny bit more salt.

Roasted Lemon Herb Chicken

This is pretty good. I zested the lemons & added the zest to the rest of the seasonings. I also put the lemon juice/oil mixture on the chicken first before rubbing in the seasoning so it would stick to the bird. After juicing the lemons, I put the rind inside the bird. It made it more lemony, but not overpowering.

French Onion Soup Gratinee

This soup is really good, but I used half chicken broth & half beef broth. I also only used shredded Gruyere cheese & I took the thyme leaves off the stem & left the leaves in the soup. I did not add the parsley & paprika, but they were not missed. Next time I may only use beef broth. I used low sodium broth & would recommend using full sodium broth. For the wine, I used a not too sweet port which gives the soup an interesting dimension, but may try a drier wine next time. As written, I don't think I would like the soup, but it's easy to adjust to your own tastes.
