Bacon Mushroom Swiss Meatloaf

I added garlic salt, pepper, & worchestershire sauce & it was still bland. If I make it again, I will add a box of herb stuffing mix instead of cornflakes to give it some flavor. Also, instead of frying up bacon, I may add precooked bacon bits.

Vegan Brownies

One of the guys I work with is vegan & he requests these brownies every year for his birthday. I cut back the oil to 1/2 cup & use grape seed oil & replace the other 1/2 cup of oil with unsweetened applesauce. I've used Dutch processes cocoa, but the best cocoa to use is Hershey's Special Dark cocoa. Very rich & chocolaty. The texture is a little odd since there are no eggs, but everyone seems to like them. I, however, still prefer non-vegan brownies!

Spicy Fish Tacos with Fresh Lime Sauce

The fish was kind of bland & I sprinkled it with garlic salt & the taco seasoning. The creamy coleslaw was a nice twist. I think I may marinate the fish next time.

Beer Brined Pork Chops

Super easy & very yummy. I only marinated it for 5 hours & will definitely marinate it for 24 hours next time. Also, I cut the pepper back to 1 teaspoon & will probably add more salt next time. I also used spicy brown mustard & maple syrup in place of the corn syrup.

Sturdy Whipped Cream Frosting

Best frosting EVER. I used it to ice chocolate cupcakes. Can't wait to try it on Red Velvet Cake. Light & not too sweet.

Citrus Turkey Brine

My whole family loves this recipe. We've used it for chicken, turkey & Cornish game hens. We've also added sage & juniper berries for variety. I definitely recommend it.

Lemony Chicken

I used butter flavored olive oil & did not add the extra butter. I also left out the capers. My whole family really liked it. Very lemony. If I make it again, I may add some cream and corn starch to thicken the sauce.

Blackberry Cobbler II

I have made this twice & make it in the square stoneware pan from Pampered Chef, which is the perfect size for this recipe. The only things I change are I add cinnamon to the dough & dot the berries with 2 Tablespoons of butter before I top with the dough. Delish with vanilla ice cream.

Chai Tea Mix

I made this using the extra spices listed in the title. I did use 1/2 cup less sugar & it seemed plenty sweet enough. However it did not seem "creamy" enough so I recommend adding it to milk rather than water or adding a splash of cream after you mix it up. The flavor is very good, but you may need to add a bit more mix to your liquid depending on how many ounces of liquid you use. I may experiment adding more spices, especially cardamom.

Carnitas Filling

This was pretty good. I made it in the crock pot. I diced the onion & used a can of tomatoes because I didn't have a fresh tomato. When it was done cooking I took out the meat, diced it & put it back in the pot with the vegetables. Oh, and I used elk, not pork, but I think you could use beef, too. I served it over grits, but it would be good in tortillas or to make enchiladas. I served it with grits thinking it would be kind of like a tamale without all the work.

Teriyaki and Pineapple Chicken

This recipe was good, but I left out the green pepper & added broccoli & sugar snap peas. It's a pretty versatile recipe & you can add & delete veggies to your taste. Also, I used fresh pineapple, but served it on the side so people could add however much they wanted. It's actually fine without the pineapple, too.

Pork Tenderloin with Creamy Dijon Sauce

We really liked the flavor of this pork, but instead of tenderloins, a pork roast would have worked better. The tenderloins had a weird texture that was kind of mushy.

Super Easy Rosemary Bread Machine Bread

This bread tastes amazing. I was a little skeptical to be using all purpose flour rather than bread flour, but the dough was the perfect texture & it raised perfectly. The crust is a hard shell over a light, fluffy center. I used rosemary infused olive oil so only used 1 teaspoon of actual rosemary & it was perfect. I did not proof the yeast, just added it as the last ingredient in my bread machine & it was fine. I will definitely make this again.

Peanut Butter and Banana Dog Biscuits

My dogs LOVE peanut butter so decided to give this recipe a try. I followed it as written - used one banana which is about a half cup & did not think the dough was too sticky to roll out. Also, I just baked them for 30 minutes. They are more like cookies that way than crunchy dog biscuits. Dogs seemed to like them. They do smell like people cookies while baking.

Chicken Korma II

There is something missing from this recipe, coconut milk perhaps. It was ok, but nothing like what we get at the local Indian restaurant. I even added more spices, but still thought it was bland. I think it needs to sit for a day for the flavors to blend more.

Chocolate Mint-Filled Cookies

These are only ok. The only mint peppermint patties I found are, in my opinion, too thick. So, I made some mint cream cheese frosting & put that in the middle instead, which was better, but not great. The third thing I tried was the best - a mint truffle Hershey kiss, but you have to flip half the cookies over & leave them on the cookie sheet & put the kiss on bottom cookie & let it melt. Once it is "gushy", put the top cookie on & let cool.

Coconut Buffalo Chip Cookies

I have never made cookies with coconut oil before, but these turned out well & are really good. I did wind up rolling them into balls & flattening them a bit before I baked them because with all the add ins, they were a little hard to keep together just using a cookie scoop. I also traded out the raisins for dried cranberries. I will definitely be making these again.

Cardamom Banana Bread

I am not a huge banana bread fan, but this bread is delicious. I toasted the walnuts in the toaster oven & used golden raisins. You don't really taste the banana, but the cardamom is mild & the raisins add a nice sweetness. The walnuts add a nutty depth of flavor & crunch. The bread is moist. I made 3 mini loaves & plan to make this again at Christmas to give away. Looks like it will freeze well. This is my new favorite quick bread recipe. I think it will make good muffins, too.
