Quick Chicken Piccata

I agree with others that the full amount of lemon juice is too strong. I will at least half the lemon juice next time, if not cut out a little over half. It was, however, very good. I fixed with orzo and broccoli. I doubled the juice and that was the right amount of sauce for us.

Diego's Special Beef Stew

This is very similar to my beef stew. I don't use thyme because I don't like it. I did add wine this time and it was good. One review said the "red wine vinegar" overpowered it..probably because the recipe called for "red wine" and NOT vinegar! You can add instant potatoes to thicken any stew or soup w/o changing the flavor.

Mom's Chicken Cacciatore

My mom was Italian and made this all the time. She never floured her chicken or used breasts (as they are always dry and stringy). I have made this using onions, peppers, tomatoes, tomato sauce, parsley, basil, salt and pepper,(never oregano) like my mother did. I also have tried adding red wine, carrots and mushrooms. I like it both ways. Mama used to serve it over rice and we prefer pasta. As always on this site, I double the sauce, as there never seems to be enough for me.

Artichoke Bread

This is like the sandwich at Penn Station, only they use provolone rather than Parmesan. I make this out of frozen artichokes to put on my turkey sandwich. Going to try it with Parmesan.

Banana Banana Bread

Cut recipe in half, as I only had two bananas. I added pecan chips and the spices (cinnamon, nutmeg, vanilla and allspice) others suggested. Cooked on 300 for 65 minutes. Very good and moist. Hubby ate two pieces right out of the oven!

Grilled Peanut Butter and Jelly Sandwich

Not much different from the "toasted" peanut butter and jelly sandwich I have been making for years. Only difference is I put wheat bread in the toaster, butter bread, then put jelly on bread, melt jelly under broiler in toaster oven, then add peanut butter. This way has a fewer steps and taste the same, if not a little better. Thanks Chasity! I would have never thought of fixing them this way.

Balsamic Grilled Zucchini

Put balsamic in shallow dish so it is already on the squash. Then cook and baste as directed with plenty of oil, salt, pepper and garlic powder or granules. Makes grill flare up but it really didn't make it burn. It took spears longer to cook on the grill than I thought but even zucchini hater hubby liked these.

Avocado Mango Salsa

I made this for company the other night. Everybody loved it. I used two small avocados, two small mangoes, the juice of two limes, salt and grated a couple of TBS of onion. (I don't like chunks of raw onion) It was delicious!! Thanks for sharing this recipe!

Slow Cooker Lemon Garlic Chicken II

This was just okay. Three hours was way too long and made the outside of the chicken dry and tough. I should have know better than try to cook chicken that long in a crock pot! As others suggested, I used more spices but only 3 Tbs of lemon juice. I used chicken broth in place of water for more flavor. That didn't help much. I won't make this again.

Slow-Cooker Barbecue Ribs

These perfectly good boneless pork ribs were, indeed, falling apart after cooking on low for five hours. They were so dry, even with the sauce, that you could barely chew them, much less swallow them. The sauce was good, but I used Bull's Eye in place of the ketchup and left out the sugar, as I don't like sweet sauce.

Marinated Barbequed Vegetables

Excellent. Different from your regular k-bob veggies. I fixed them with Unbelievable Chicken from this site and it was great. I fixed the veggies on the grill in a veggie grilling dish (the kind with holes in it.) It flared up a little at first. Didn't use eggplant. Used zucchini, yellow squash, quartered onion, yellow bell peppers and mushrooms. YUM!!

Unbelievable Chicken

I fixed this for the second time tonight. My husband raved about it the first time I fixed it. He raved about it tonight and asked why we didn't have it more often. I doubled the recipe and used skinless, boneless thighs because I don't like breast. I kept 1 cup of marinade out to pour over chicken. I served it with black beans and yellow rice. Delicious!!! Thanks for this recipe!

Peppered Shrimp Alfredo

I have doctored up "jar" Alfredo sauce for years without the onions and peppers. I like it over linguine pasta. I may try it with the onions as I don't care for bell peppers. Sometimes I add a can of chopped clams with juice to give it a more seafood taste. Delish!!

Fried Broccoli

A variation of this is to use half broccoli and half cauliflower. If you brown slivered almonds in half butter and half olive oil first, then add veggies, man it is really good!!

Browned Butter Vegetables with Almonds

Delicious! I didn't use bell pepper and only had fresh-frozen broccoli and cauliflower and it still came out great. Fresh veggies would have been better but this was really good! Hubby and I both liked it a lot.
