Sarah's Applesauce

I use this recipe regularly- really easy recipe for a potluck, brunch, or just to have as a snack. I ALWAYS make this in my smaller crock pot, 5 apples always fills it up to the very top, but since they cook down quite a bit, there's plenty of room by the end of 3-4 hours. A word from the wise, all apples are not created equally! Some apple varieties will NOT mash very well. Gala works well, Fuji does not (if memory serves). You do not need to add sugar to this recipe, which makes it great for diabetics. If you stir gently halfway through cooking but leave the apples mostly intact, it is a great ice cream topping.

Chocolate Syrup

Even after adding 1 1/2 tsp of Cornstarch, this was still really thin. Next time I may reduce sugar by half, and use sweetened condensed milk instead.

Yummy Lasagna

This turned out great! First time I've made homemade lasagna by myself. Based on others' comments, I used 1 lb Italian sausage instead of pepperoni (meant to use 1/2 lb, oops!), and let the sauce simmer with the meat for 20-30 minutes. I ended up using 1 and 2/3 medium (28oz) jars of spaghetti sauce. I also used 1/8 c of basil, but next time I am going to use the full 1/4 cup. I think I might also add oregano and more garlic, as it wasn't seasoned as well as I'd hoped. Wasn't nearly as difficult as I thought it was going to be, and we ended up with TONS of leftovers (15 pieces in a 9 x 13 pan). Two pieces was plenty for two people.

White Chocolate Macadamia Nut Cookies IV

These cookies are just as good as the Subway white chocolate cookies, if not better (homemade). I use a full 16 oz bag of white chocolate, and 4-6 oz macadamia nuts. Super easy, and always a hit! They are usually gone in a matter of days at our house!!

Four Egg Yellow Cake

I was very disappointed in this recipe. I followed everything to a "T," and had to cover it in plastic wrap and place in the fridge for several hours before I could frost it. The cake was so dry we ended up throwing away 75% or more of it. I am giving it two stars instead of one because the time in the fridge in plastic wrap may have been partially to blame.

Laurie's Tequila Marinade

This was good, but a overpowering for my tastes. I used this as a marinade for chicken kabobs (I let it marinade for just over 12 hours); I think it probably works better for larger cuts of meat, or for no more than 2-3 hours for kabobs.

Pecan Pie III

The only thing that disappointed me about this pie was my store-bought pie shell (NOT doing that again!!). I didn't measure my pecans, but I'm certain I used more than 1 cup- probably 1 1/4 cups. I used 1/2 cup honey and 1/4 cup butter in place of the corn syrup (mine had gone hard as a rock, didn't realize that before I started baking!), and it still turned out wonderfully. I think that substitution will become a permanent part of this recipe in my kitchen from now on. We served this pie warm with a scoop of vanilla ice cream on the side- SO GOOD! Very easy to make, about 5 minutes to stir it together and get the whole thing in the oven.

Banana Banana Bread

This is the first banana bread I've made from scratch- it's a keeper! I messed up by failing to mash my bananas (used 5 medium bananas) very well, and then added them after I'd mixed the wet ingredients in with the dry, but it still turned out WONDERFULLY!! I was very careful to FOLD in the bananas to keep from over-mixing. I sprinkled some brown sugar on the top before baking, and used 1/2 cup walnuts. I also added 2tsp vanilla, and 1/2 tsp each of cinnamon and allspice, and 1/4 tsp of nutmeg. This is a pretty dense bread, but it was moist and delicious!

Parmesan Chicken I

This dish cooked very quickly! 4.5 hours on LOW. I used breast strips (didn't realize they were strips when I bought the meat), and couldn't find "converted" rice, so I made that separately. I also used more butter than the recipe calls for. This was very salty, though. Next time, I will use low-sodium cream of mushroom and 1/2 the onion soup mix. Cooking the rice with the rest of the dish probably helps to absorb some of that salt. However, this was very filling, and I think I'm going to end up freezing some of it for an easy dinner next week!

Slow Cooker Chicken and Dumplings

Very bland, but the chicken was very tender. I used chicken broth instead of water, which I think helped. I added the biscuit dough about 90 minutes before we ate, and some of them were still slightly doughy in the middle with the crock pot on high. Absolutely needs more seasoning.. maybe some white wine in place of some of the chicken broth next time? I am thinking poultry seasoning, a little seasoned salt, touch of paprika?

Quick and Easy Home Fries

Easy and very tasty! This was my first attempt at home fries.. I have tried hash browns before, with terrible results. These are wonderful! I used a cast iron skillet, and I think a little bit too much butter, as my potatoes came out a little too crispy in some parts, and a bit uneven. However, they are still delicious! I added about 1/8 tsp of onion salt and garlic salt in addition to pepper before tossing the potatoes into the pan.

Old-Fashioned Vegetable Soup

Didn't have Worcestershire sauce OR soy sauce, added some onion salt instead. Didn't have any celery, cut up a small potato instead, and used 1 med. fresh tomato instead of canned. Still turned out GREAT! Next time I will be sure to add the Worcestershire sauce, but this was EASY, QUICK, and fabulous!! I think this will become a household staple.

Mrs. Sigg's Fresh Pumpkin Pie

I have never gotten so many compliments on a dessert before- this is fabulous! I doubled the recipe and somehow ended up enough filling for three pies. I needed to add milk to the pumpkin puree in the blender to get it a nice creamy consistency to make it easier to pour out and mix (this could be how I ended up with way more filling than I needed). I substituted heated fresh milk for evaporated milk as I was out, but I don't think it made a difference. Roasting time for the fresh pumpkin varied somewhat for me- could be my oven. It took me almost twice as long to roast the pumpkin thoroughly. I also coated my pumpkin flesh in cinnamon sugar butter before roasting.

Chicken Pot Pie IX

This came out great! I used frozen pastry dough instead of pie crust and pre-baked my bottom crust with an egg wash before filling my ramekins. I don't think we needed any major modifications at all. This one's a keeper!

Alfredo Sauce

Super easy to make, easy to remember! SO much better than the pre-made canned stuff. I will NEVER buy pre-made alfredo sauce again. I have found that if you don't allow the cream and butter a few minutes to simmer, the cheese does not combine well. I usually add a little black pepper and sometimes dried oregano instead of parsley if we're out of parsley. If you have left-overs, heating goes more smoothly if you reheat in a small saucepan, stirring constantly. Refrigerated, the butter tends to separate.

Broccoli Rice Casserole

I am only giving this recipe 4 stars because CheezWhiz is not an ingredient- it is a condiment. A really, really unhealthy condiment. We used a cheese base of butter, flour, milk, and shredded cheddar, then added the condensed chicken soup and more milk. We threw in the cooked chicken, thawed broccoli, and rice, then baked for 30 min. Came out great with minor modifications!
