Nothing wrong with this recipe. I adjusted the liquid and sr flour amounts to the consistency I like. I did add some cinn, a little sugar and vanilla. They puffed up nicely and tasted good.

Coconut Poke Cake

Reviewed: Feb. 15, 2015
I made this for my husband for Valentine's day. It is much better the second day. I thought it was too sweet the first day. I also added crushed pineapple to the top after the milks had soaked in. I added coconut to the whipped cream as well as on top. I used the juice from the pineapple and milk in place of the water for the cake mix.

Johnny's Slow Cooker London Broil

Reviewed: May 16, 2014
Sorry, I changed it up some but I did use this method to cook it. I used what I had on hand rather than making a trip to the store. I did not have beef broth or red wine. I used a 3# London broil, white wine and half a packet of onion soup mix. I did use the creole seasoning and also some garlic pepper seasoning. I did not use carrots or potatoes but did use about 4 oz of sliced mushrooms that needed to be cooked. I also used the golden mushroom soup. I have not eaten it yet but have tasted and it is very good in flavor. I will serve this over mashed potatoes.

Southern Pimento Cheese

Reviewed: May 16, 2014
Eating this on celery fresh out of the bowl as I type. Great easy recipe. I did add the Worcestershire, spicy brown mustard and pickled jalapenos. I also used chipotle powder as I prefer that flavor. I made half a recipe and only measured the cheese. I also used a mix of salad dressing and sour cream. Not a big fan of mayo.

Awesome Egg Salad with a Kick

Reviewed: Apr. 23, 2014
I just made this and had a toasted egg salad sandwich for lunch. I had 5 boiled eggs on hand and needed to do something with them so I chose this recipe. I had to use horseradish sauce as that is all I had. I also 'eyeballed' the amounts and taste tested as I went. Other changes due to what I had on hand were spicy brown mustard and yellow onion. I added a dash of garlic powder and celery salt as well. This is a good recipe but I rarely eat egg salad and my taste buds are wanting something more. Now that I have had my sandwich I am going to add some chopped pickled jalapenos to what is left.

Tomato Chicken Parmesan

Reviewed: Oct. 4, 2013
I tried this recipe tonight. As others, I baked rather than frying. I baked for 20 minutes on a rack on a cookie sheet then I added sauceto the bottom of a pan, added breasts, added more sauce on top and some parm. Baked 20 more minutes then added Italian blend cheese and baked 10 more minutes. I had 3 breasts pounded thin and seasoned those prior to breading with S&P, garlic powder and no salt added Italian seasoning. I only used 1 large egg with a little water added and I double breaded with seasoned bread crumbs. I made the sauce with home canned tomatoes, paste and seasonings. Served with a salad and garlic cheese bread. Very tasty and thanks for the recipe!

Asian Twist Chicken Wings

Reviewed: Aug. 19, 2013
This is the second time I've made this, both times using boneless, skinless chicken breasts. Due to time restraints, it only marinated about 45 minutes. This time I used chipotle powder with the chili powder and garlic pepper on the chicken. I added a couple garlic cloves in with the dried tomatoes and wine. I used less dried tomato this time and an extra tablespoon of honey. The first time I think I may have used too many dried tomatoes as I do not not know what "2 sun-dried tomatoes" amount to. I dry my own tomatoes in a dehydrator and the first time I used a palm full. This time I used about 4 pieces. I thought it a little too tomato-ee the first time but my hub thought it was perfect. I have some wings in the freezer and I will use this recipe again and try to fall somewhere in between on the tomatoes.

Sweet Potato Cranberry Bake

Reviewed: Nov. 23, 2012
I also made this in the crock pot. I partially cooked the potatoes in the microwave and I cut them into chunks rather than slices. I used dried cranberries because that is what I had on hand. Very easy and very good.

Easy Ham and Cheese Appetizer Sandwiches

Reviewed: Nov. 20, 2012
I have made these for years for home and work. I use the Party Rolls. I melt the butter with the mustard, etc. I brush the bottom inside layer with the mixture. When the top layer of rolls are laid on the ham and cheese I cut through the layers and then pour the remainder of the butter mixture on top, spreading with a brush. Cover with foil and bake.

Squash Casserole II

Reviewed: Sep. 12, 2012
I liked this enough to make again.Even though I am a southerner I never ate much squash casserole. We normally bread and fry, season and saute or slice thin and add to salads. Having a grocery bag full given to us I decided to make a casserole and freeze the rest for future casseroles. Looking at the recipes I thought I would try this because it didnt have soup in it. I did half the recipe since there are only two of us. I used what cheese I had on hand which was a little cheddar and a taco blend. I had about 3/4 of a sleeve of club crackers which were not fresh enough to eat but good enough for this. I steamed the squash 8 minutes in the microwave. I added garlic and onion powder. I used a scant T of sugar. I only used 2 T of butter that I pulsed with the crackers. I mixed some of the crackers/cheese into the casserole and put the rest on top. As for the green onions, here's a tip that I did not know til a couple weeks ago, some of you may know this already but I sure didn't. Last week I found a small (sad) bunch of green onions in the fridge. I trimmed most of the green off, stuck them down in a small juice glass of water (change frequently) and they had growed enough to use for this casserole. They are back in the water and growing again. You can do this in dirt but they grow faster in water.

Isaac's Juicy Chicken

Reviewed: Sep. 12, 2012
I am giving 5 stars even though I made changes. I forgot the paprika and I like paprika on chicken so I'm sure it would have been tastier with it. I also used what I had on hand. The thighs (4) were bone-in with skin. I removed the skin and rubbed s&p and garlic onto the thighs. I omitted the egg. I poured about 1 1/2 T spicy ranch dressing in a small bowl and stirred in a crushed chipotle. Guesstimated an amount of seasoned Panko with some extra seasoning added that I put on a paper plate. I brushed the dressing on the thighs one at a time, plopped onto the Panko, flipped over, brushed and flipped again. After they were all on the pan I sprayed them with a light coat of olive oil. I baked at 350 for 50 minutes. I used 350 because I also had a squash casserole to bake.

Blackberry Cobbler II

Reviewed: Sep. 3, 2012
Great easy recipe! I had some sugared frozen wild blackberries so I had to just guess at the amount of sugar to add. I did add 1/2 tsp vanilla each to filling and batter. I also added 1/2 tsp cinnamon to the filling. For the topping I sprinkled a cinnamon sugar mixture on top. I did use a cast iron skillet. I was light on the berries, used all I had, but left the batter the same. I say batter because I did not have dough, too much water, not enough flour, I don't know but it worked out.

Very good! I left out the paprika, forgot about it, but still good. I mixed everything in the bowl I soaked the 'taters' in and then spread out on a foil lined cookie sheet. Baked @400 for 30 minutes, flipped and baked another 30 minutes.

Tortillas II

Reviewed: Aug. 7, 2012
Although I made changes I will still rate this 5 stars. After reading some reviews I reduced the baking powder to 1/2 t and increased the shortening to 2T. I also used 1/2c wheat and 1 & 1/2 AP. I will use this recipe again and use all AP flour and increase the salt a tad. I did use very hot water and let the dough rest 1 hour. It handled, rolled and cooked well. My yield was 7 8" + 1 6" and thanks to whom ever suggested using a pot lid to shape them.

Salsa Red Beans N Rice

Reviewed: Aug. 7, 2012
5 stars for easy and quick. I used black beans because that's what I had, not fond of kidney beans. To suit my taste I had to add a few more seasonings. I used home made charred tomato salsa and also chopped up a fresh tomato to mix in with the rest.

Smooth Sweet Tea

Reviewed: Jul. 20, 2012
As a southerner I did know about the baking soda in tea, I also add baking soda to beans. I had forgotten about adding it to tea so thanks for the reminder. As for bitter tea, brands vary in their bitterness so I have never been a fan of Lipton. I prefer Luzianne or even Walmarts to Lipton. I don't own a tea maker or even a glass pitcher. I do have a 4 cup glass measuring cup and I add 2 cups water and bring to a boil in the microwave. Remove from microwave, stir in sugar, add tea bags, cover and let it steep 10-15 minutes.

Zucchini Cobbler

Very good! Who knew!? Used one super large zuke for an 8x8 dish. Yes I scraped out the seeds and pulp. Only reason DH knew was because I had saved the peelings for our goat.
