Baked Dijon Salmon
Strange combination of flavors. I followed the recipe precisely and, although the fish looked terrific, the flavors did not come together at all. You taste the subtle salmon and then get blasts of honey-mustard, which is very overpowering. My whole family agreed that the flavors just don't go well together. The breadcrumb-nut topping adds some great texture, but we'll try it with a different sauce next time.

Gourmet Mushroom Risotto
Fantastic! I have never made risotto before and it was incredibly easy (just get ready to stand and stir for 15-20 solid minutes). Be sure to have the risotto cooking on medium high heat and have the chicken broth almost boiling. This really speeds the absorption. Otherwise you will be stirring for 40 minutes. It is terrific!
