Meatball Nirvana

I've followed this recipe several time. It's great as written. I also enjoy doctoring it up with meatloaf mix instead of straight-up beef, replacing grated parm with shredded parm, and mixing up the spices here and there to taste. The hot sauce and crushed red pepper really help the meatballs stand out on their own when served with a red sauce and pasta.

Indian Chicken Curry (Murgh Kari)

I prepared this curry as specified. I'll certainly make it again, but next time I'll tweak the recipe accordingly: Cook over medium heat, not high or med/high as the spices & onions scorched. Add cauliflower, parsnip or other veggie to make it more of a "one pot meal", cube chicken & marinate in a spiced yogurt brine before cooking in order to make it more flavorful.

Spiced Applesauce Bread

Other than using more spices than called for, I followed this recipe closely. It came out a bit bland. Thankfully, I pulled it out of the oven about 5 minutes early - it was already starting to burn around the edges. The bread was moist, but I'm sadly still on my hunt for the perfect applesauce bread/cake.

Skillet Ham, Cabbage and Potatoes

The only change I made to this recipe was using chicken broth instead of water. It turned out very tasty - my kids and mother in law loved it, and I found it to be very satisfying. My husband isn't a cabbage fan, and while he ate it, he just didn't love this one.

Chicken Tikka Masala

Absolutely delicious, but 4 tsp salt in the marinade is just too salty for my taste. Cut it down to 1-2 tsp, and it's a party in your mouth. YUM!

Chicken Stew with Dumplings

This is a very good, light-tasting version of chicken & dumplings. The broth did not thicken at all for me, but it was still yummy. It's a quick and easy way to use up leftover chicken. I'll make this again.

Lamb Tagine

After reviewing this recipe and the rave reviews that accompanied it, I knew I had to try it. Although it tasted fine, I really wasn't wowed by it, which disappointed me. All in all, it was ok but just not worth the effort I put into this. I won't be making it again.

Blue Ribbon Overnight Rolls

These rolls are excellent when served warm but mediocre when served cold. This recipe definitely made it easier to have fresh baked rolls for Thanksgiving since I could do most of the work the night before.

Slow Cooker Stuffing

I stuffed the turkey with this instead of slow cooking. Half of the amount of chicken broth was plenty. I also added one peeled/chopped up apple then baked for about 20 min to half an hour after unstuffing from the turkey. I typically don't love homemade stuffing, but this was the exception - it turned out to be moist and extremely flavorful. I'll definitely use this recipe in the future.

Mrs. Sigg's Fresh Pumpkin Pie

This pie was delicious! I didn't have pumpkin pie spice on hand, so I substituted with ground cinnamon, cardamom, nutmet, cloves, allspice, and ginger. I made 2 pies. The baking time for one of them took longer than the other, but I cooked until the toothpick came out clean, and it turned out perfectly.

Spiced Cocoa Cupcakes

I read other reviews and followed some of the recommendations when making this. I added an extra egg, 1/4 C of applesauce and 1/4 C milk. I swapped out the cranberries for Ghiradelli 60% chocolate chips, and I also frosted with cinnamon cream cheese frosting. They were absolutely delicious with the changes, but I don't think they would have been nearly as good had I followed the recipe as is. Thanks to the other reviewers for their recommendations.

Baked Kale Chips

Very good snack. I used Russian red kale, which is a flat kale. It was done in 10 min and was very tasty. I only got to try a couple because the kids devoured them so quickly.

Peach Cream Pie I

Other than slightly reducing the sugar, I followed this recipe exactly. The peaches tasted ok, but the "cream" part was way too sweet and not creamy tasting at all. I was very disappointed.

Spicy Kielbasa Soup

I enjoy this recipe as is or with the following modifications. Add a large can of crushed tomatoes to give it a stronger tomato base, along with using homemade chicken stock instead of canned broth. Green beans work if you don't have zucchini, and the kids really like it when I add cooked macaroni to their bowl of soup. Also, I typically omit the celery since I don't care for it.

Chicken Noodle Casserole I

This is great comfort food. I sometimes add garlic powder, onion powder, and red pepper flakes for added flavor. I also incorporate broccoli for color & nutrition (I typically throw it in with the noodles while they boil). The kids & husband love it. I might start doubling the recipe so I can actually have leftovers for once.
