Melt In Your Mouth Blueberry Cake

Reviewed: Jul. 21, 2009
A-MAZING!! Moist and fluffy, the perfect combination. Usually with muffins if it's moist then it'll be pretty dense, but this was light and fluffy. Made a few changes though to make it extra good... whole milk instead and brown sugar in place of the white sugar when making the topping. Just a note... you only need half the amount of topping that this directs you to make, so split that in half.

Green Bean and Potato Salad

Reviewed: Sep. 10, 2009
Excellent autumn dish - a little less dijon mustard (it sort of overtook the flavor of the basil and garlic). I definitely recommend either using less of the dressing mix or more potatoes and beans. I threw some chopped spinach in to make it a little healthier and add a bit of color. Otherwise a good, quick, recipe. Oh, and second time around I would add sungold cherry tomatoes.

To Die For Blueberry Muffins

Reviewed: Sep. 10, 2009
Sooo moist!! A few changes though: use brown sugar where it calls for white, whole milk, and cut the crumble quantities in half. Best muffin I've ever tried A++

Ninety Minute Cinnamon Rolls

Reviewed: Oct. 22, 2009
Very good, sweet enough to not have a frosting on top but... what's a cinnamon roll without the cream cheese topping?! Here's how I make my frosting: 2oz cream cheese 1.5t. vanilla 1/2t. salt 1T. white sugar This recipe also really only took 90min. The rolls didn't seem to rise as much as I hoped simply because they really weren't given much time to rise, but after baking them they had taken on the size I was looking for. (Oh, and the raisins are a must!)

Chocolate Cavity Maker Cake

Reviewed: Dec. 18, 2009
Used raspberry liquor instead of coffee flavored liquor. Also, used half the amount of sour cream (used only 8oz instead of 16oz... much healthier!!) Very good, didnt use a bundt pan so it wasnt as dense and moist as it would have been.

Chicken with Ginger Pesto

Reviewed: Dec. 18, 2009
This is NOT a pesto. This recipe is at a good start however needs a fair amount of changes and additions. Suggestions - Don't skimp on the green onions, shortly after adding green onions add 1-2T of lemon juice (this will add a little zest and freshness to the taste). As other reviewers have written... 1t. of salt is definitely enough. Lastly, ginger burns easily, so be careful because that can definitely make or break the dish.

Mocha Chocolate Chip Banana Muffins

Reviewed: Dec. 20, 2009
Very good! Only used half a cup of butter instead of a full cup and was still delicious and moist. I would suggest adding a little milk to make up for the absence of butter though. Also, it's the holiday season so I wanted these to be a little more festive... instead of using chocolate chips, I used green and red dark chocolate m&m's (aand I put in about a cup and a half of them)... sooo good!

Delicious Ham and Potato Soup

Reviewed: Feb. 14, 2010
Good and easy to make - still an excellent recipe when made meatless. Broth was not as flavorful as my other recipe but still very good considering how quick it was to make.

Mediterranean Black Olive Bread

Reviewed: Apr. 4, 2010
Excellent moist bread with a nice and crispy outer crust. Very enjoyable. Be sure to allow time for the bread to rise all three times, this will make or break the fluffy moistness.

Sangria! Sangria!

Reviewed: Apr. 4, 2010
WONDERFUL. I made this for a party of 23, it's sweet but not too sweet and as several other reviewers have mentioned... the brandy IS key. I used a dry Barefoot wine and went ahead and threw a few more fruits in just to add more color to the drink since this was a honeymoon-themed bridal party (threw in some kiwi and strawberries). You really can't go wrong with the fruit combos. Made this the day before the party (a must in order to allow all flavors to blend and fruit to marinate) but come day of the party totally forgot to add ginger ale and carbonated water (I was going to make two batches to see which was more popular among the guests), but the drink was a huge hit even without the fizz!

Clone of a Cinnabon

Reviewed: Apr. 4, 2010
Very sweet and moist. I recommend using about 1T less butter in the bread batter and a full teaspoon of vanilla in the frosting (this will make the frosting a bit more flavorful and smooth. When making the brown sugar filling the amounts in this recipe created way more filling than necessary and caused much of the filling to run out of the cinnabon, so I would suggest easing up on the butter by a tablespoon or two in order to keep it a bit thicker but still just as sweet and rich.

French Onion Soup III

Reviewed: May 8, 2010
Basic and good. Definitely too much butter though, recipe calls for 1/4c butter but you can make the recipe just as delicious by sautéing the onions in half the amount of butter and use water as a substitute. This is healthier and just as delicious!

Stuffed Jack-O-Lantern Bell Peppers

Reviewed: Jun. 15, 2010
Very good, had a different colored pepper for each person and everyone loved it. Actually made this recipe in early June so didn't do the jack-o-lantern idea but will certainly have to do this recipe again in the fall. I did use chili powder instead of sauce and didn't use very much since I wasn't sure if the guests would like spicy food, also used a little more Worcestershire sauce to give it a bit more of a kick (almost 4T). Next time I will probably throw some shredded cheese on top, underneath the "lid" of the pepper. Nice and quick.

Simple Garlic and Basil Pesto

Reviewed: Jul. 11, 2010
Good pesto. Only used half the amount of chili powder and there was still a descent kick. Also did not use any Brazil nuts and replaced pine nuts with walnuts. I gave this recipe four stars because it called for too much garlic- I suggest using 1T or 1-1/2 T at most.

Butternut Squash Bake

Reviewed: Sep. 14, 2010
Nice hearty vegetarian dish. Used feta as per other suggestions. I did not have Italian bread on hand, so used a bland old dry loaf I had lying around and threw in some oregano and sage too for more flavor - really glad I did this, the oregano really made the finished dish perfect. Gave four stars instead of five simply because the recipe is a bit bland but overall is a good dish... just feels like there's something missing.

Acorn Squash

Reviewed: Jan. 4, 2011
Very good, I added some craisins with the butter and used only a tiny bit of white confectioners sugar... an excellent decision taste-wise and the contrasting colors made the presentation great.

Rolled Fondant

Reviewed: May 27, 2011
This is a very easy and no-fuss recipe! I didn't use all of the confectioners' sugar but that was the only modification from the actual recipe. Be careful not to knead for too long as the fondant will begin to crack - just add water a few drops at a time to take care of cracking.

Hearty Split Pea Soup

Reviewed: Aug. 31, 2011
This was very good, just needed more liquid. I added an extra 1/2 cup from what the recipe calls for and should have added an extra cup. I used water, not broth, since you are getting plenty of flavor from having all the vegetables and ham in the slow cooker together - broth has soo much sodium in it (unless of course if you are making it from scratch) and the soup has plenty of flavor without the extra broth. Next time I will add more water, plus carrots and an extra handful of peas halfway through (as another reviewer recommended) for added texture.

Marinated Grilled Shrimp

Reviewed: Sep. 1, 2011
Verrrry delicious! This was such a simple/fast recipe to throw together and the result was a great amount of flavor, talk about instant gratification! Right before serving, I mixed 1cup cooked orzo in with the marinade and shrimp. Next time I will add way less oil though, maybe 2T, otherwise wouldn't change a thing.

Apricot Brown Sugar Ham

Reviewed: Apr. 11, 2012
This glaze kept the ham nice and moist, next time I will heat a little extra glaze to serve as a gravy for the ham. Will definitely be making this recipe again.
