About this Cook
I hated cooking. I became gluten intolerant in Sept 08 and my whole life changed! Since I could no longer eat...well pretty much all the fast and easy foods I was used to eating, I had to start cooking real food for myself. I've discovered a love of food and cooking I never knew I had! I now spend a lot of time thinking about what I've made, what I'm going to make, and how I can change gluten recipes. Food now rules my life and I love it!
My favorite things to cook
I love using fresh and whole ingredients, and things that are processed as little as possible. I love chopping vegetables and converting my old family gluten-filled recipes to gluten-free versions.
My favorite family cooking traditions
Growing up, my family baked a lot but didn't do much savory food. The goal in my family has always been fast, cheap, and filling. I'm the first to try to use more whole foods and less processed junk. I'm also the first gluten-free member of my family.
My cooking triumphs
My lasagna. I lived in Italy for a year and have my host mother's recipe that I tweaked to be American-friendly and gluten-free. It is pretty fantastic if I do say so myself! It's a lot of work, so about once a year I make several and freeze them.
My cooking tragedies
Oh, too many to list here! I just tried making gluten-free mac and cheese for the first time. It's OK but it came out a little eggy. I also tried to make my grandmother's coffee cake gluten-free and it was horrible! But, that's how we learn!

Broiled Tilapia Parmesan
I'm not a big fan of tilapia - I usually find it to be bland and sort of boring. Not my go-to fish. But this preparation is wonderful! No more boring tilapia! I made this once and then ran out and bought another bag of tilapia so I could make it again!

Becky's Chicken Salad
This is one of the best chicken salads I've ever had! I took it to Book Club and it got rave reviews, they ate every bit of it, and everyone wanted the recipe. I made another batch for myself the very next day. I did add some chopped dates I happened to have, and that was a nice extra flavor. Very good, this will be a regular.

Stuffed Mushrooms I
After reading the other reviews I modified the recipe and was very happy with the results. I used spinach/artichoke flavored cream cheese, 2 cans of crab, 1/2 c parmesan, lemon juice and zest, minced garlic, salt and pepper, and all the stems. I have a lot more filling than mushrooms but that's OK! I also put the filling into a Ziploc bag and cut off a corner to fill the mushrooms, this made it really easy. I baked them on a broiler pan since there were several comments about extra liquid and I hate soggy mushrooms. I also pre-cooked the mushrooms like one reviewer suggested. Turned out great and were a hit at the party!
