Made-in-Minutes No-Cook Fudge

I just recently learned the benefits of unrefined coconut oil and wanted to try this. I used 1/2 the cocoa powder for a lighter flavor and a bit of vanilla as well. I can see adding in coconut flakes or chopped nuts. I warmed the oil slightly so it would blend easily and now I am eating it with a spoon.

Healthy "Italian Mac and Cheese" with Carrot Puree

Healthy? Hardly! But healthier. I love the idea of sneaking in carrots into this comfort dish. Heavy cream makes for a great dish but 1% does fine too. I often add cooked veggies. Steamed broccoli is my favorite but for folks whose kids don't "do" veggies it is a good idea.

Stef's Super Cheesy Garlic Bread

Concept is good but WAAAAY too much fat. The second time I made it I used 1/4 c butter, 2 T olive oil and 2 - 3 T mayo. The mayo was still overpowering. I will cut it down more or omit altogether.

Dipping Sauce for Coconut Shrimp

Goes great with coconut shrimp. I used my rhubarb orange marmalade since it was open and ended up adding some fresh chopped pineapple to stretch it.

Southern-Style Oven-Fried Catfish

This turned out quite crisp, tasting like fried without being greasy. I forgot my hot sauce in the egg this first time. :( I also subbed 1/2 Panko for 1/2 the cornmeal because we don't like just corn meal. I will make this again.

Rich and Creamy Roasted Eggplant Soup

As written I have to say this was quite bland. I ended up adding cumin, turmeric and other assorted spices as well as roasted red pepper. I was going to add sliced, sauteed mushrooms but I don't think I will even waste my shrooms; we probably will not finish the leftovers. It is edible now with the add ins.

German Potato Salad

Pretty good. I had to make twice the amount of sauce called for to cover four potatoes; that was before it even soaked in. Didn't have green onions so I sauteed onion in the grease before adding sauce ingredients and added chopped fresh chives before serving.

Best Zucchini Appetizer

This is a good base recipe other than it needs a lot more seasoning. I cut down on the squash and added some asparagus that needed used. Many different veggies would go well with this recipe: mushrooms, peppers, cooked diced potato, a handful of leftover green beans... use your imagination.

Spicy Cabbage Kimchi

As written after squeezing out the water I have no liquid left to cover the vegetables. I added a tiny bit of salt (I cut down on original amount and am worried about spoilage) and topped off with kefir whey. Results in four days. Stay tuned.

Spinach Stuffed Portobello Mushrooms

Oh. My. Gawd. This was fabulous. My changes: I sauteed the chopped stem with some onion and garlic, then tossed the spinach in to wilt. I think it made it more manageable. Did not even detect the pepperoni so I will probably leave it out next time although it may have been scant as I don't measure. Go light on salt. Only my second 5 star rating.

Chili Rellenos Casserole

This was pretty good and very easy. I had fresh peppers to use so roasted, steamed and peeled them first.(Had three and cut recipe in half.) Didn't do any sauce but it needed some enchilada sauce. NOT plain tomato sauce though!
