Sarah's Applesauce

Wow!!! Really, really perfect - perfect flavour, consistency, sweetness, cinnamon. Just YUM-O! I needed applesauce for a recipe and in 20 minutes I had this ready to go. I`d definitely double this and for sure will be using it again and playing with the ingredients a bit. Thanks for a great, super-easy recipe!

Cranberry Mango Bread

I was really surprised by how much I liked this quick bread! The changes I made were to use all-purpose flour, fresh mango that I pureed in the blender using 2 of the smaller and tastier yellow mangoes and I sprinkled organic cane sugar on top. I loved the crunchy topping and the texture of the inside of the bread - nice and moist. I noticed that in a couple of pieces there were small mango chunks and these pieces were particularly good leading me to believe that maybe the mango amount should be doubled with one ripe mango cut into small chunks. I would add even more fresh cranberries next time and maybe a bit less walnuts or even leave them out altogether. Very nice bread that I would make again. The orange zest is also subtle but definitely adds flavor. Thanks for this recipe!!

Baba Ghanoush

This baba ghanoush was fantastic! I`m so happy to be able to make this homemade now and will never go back to buying store bought. I followed the directions exactly and was not disappointed. It has a great smoky and garlicky flavour. I used a blender instead of a food processor and it worked out great. Thank you for a great recipe!

Swedish Klimp

These dumplings are excellent!! I made them for a chicken stew and they went perfectly with it. This makes quite a lot of dumplings so I actually put some of the batter in the fridge and made dumplings again a couple of days later using some vegetable broth. Yummy and comforting. I would definitely make these again for any recipe calling for dumplings. They have a really nice basic dumpling flavor and the texture is dense and filling. Thanks for a great dumpling recipe!!

Best Ever Muffins

hmm, I'm a bit stumped as to why there are so many 5 star ratings. I was disappointed with these even though I followed the recipe exactly. The only thing I had added was my own homemade preserves in the middle of the muffin. Coming out of the oven, they looked like they baked up okay but then they totally stuck to the muffin liners and just didn't have a great taste; quite bland actually. I was so looking forward to a great muffin this morning with my homemade preserves but this is definitely not it. Sorry for the not-so-great rating but this seemed like a waste of ingredients in my opinion.

Lebanese-Style Red Lentil Soup

This soup definitely merits 5 stars for flavor, ease of preparation, nutritiousness and bonus points for inexpensive! The combination of the red lentils, cumin, cilantro and lemon are fresh and earthy at the same time. I would say all the ingredients are key to the success of this soup. I used vegetable stock instead of chicken and only used the juice from half a juicy lemon. I did not bother blending it at the end and I really enjoyed the thick texture. Great comfort food! Ate with a buttered whole-wheat baguette and it was hearty and very satisfying. I will definitely be making this soup again Thanks for a great tasting and easy recipe!

Joey's Peanut Butter Cookies

It had been a while since I`d made peanut butter cookies and found this recipe. It`s good...even very good but I don`t think it`s the best pb cookie I`ve ever had. I followed the recipe precisely and had no trouble forming them into balls; I found the dough to be fine to work with using a tablespoon measure. The flavour of the peanut butter is not quite as pronounced as I would have liked and the texture is a tiny bit cumbly but nothing serious. They are otherwise ight and fluffy, not dense. I really enjoyed these a lot but would still look around for that ultimate pb cookie!! Thanks for sharing!

Scallop Scampi

I was craving scallops and found this recipe for them. Boy, was I ever not sorry to have chosen this one! It is really delicious. The sauce was creamy, garlicky, with that lovely flavour that white wine adds to dishes such as this. I pretty much followed the recipe and was very happy with the results!! I used and prefer the smaller scallops. Yum!!

Guacamole

Not that this recipe needs another review but I have made it so many times now, it seemed only right to rate it. Everyone I have made this for loves it too! I love the proportions as they are, though I sometimes add a bit more garlic. My son loves this guacamole without the cilantro - he`s not a fan so if you aren`t either you can omit it and still have great guacamole. Personally I think the cilantro adds excellent flavor. Don`t be afraid to use a little cayenne if you`re not sure; that`s what I did the first time and it added just a little kick. No other guacamole recipes that I`ve tried are as good as this one. Thanks for sharing a great recipe!!

Big Al's K.C. Bar-B-Q Sauce

I found this sauce to be really really good!! I stuck to the recipe exactly except didn`t have celery seed. It cooked up wonderfully and tasted delicious. I have used it on ribs and chicken sofar and look forward to using it again. It has a wonderful full smoky flavour with a nice thickness to it. Thanks for sharing a great BBQ sauce!!

Celery Stuffing

Pretty good stuffing. This was my first time making stuffing without sausage and it was really easy. I love the taste of sage so I added extra. The proportions seemed right to me. I used several different types of leftover bread that I cubed myself. I think you could definitely play around with this recipe by adding cranberries but overall it is a good easy stuffing recipe. I would consider using this stuffing for an everyday meal and not just for Thanksgiving or Christmas. Thanks for the recipe!!

Coconut Cream Cake I

This was a really delicious cake - I used a regular white cake mix, left out the coconut extract because I didn`t have any and baked it in a 9 x 13 pan. When it was done I cut it in half and made it into a square layer cake using the whipped cream as frosting in between layers and on top of cake. It tastes really coconutty and is very sweet but seriously delish!! It was still excellent after 2 days. I`m not at all a fan of cake mixes but this cake really changed my opinion about using them as a base for something fancier. Don`t hesitate to try it if you like coconut and white cake. Even my son who normally doesn`t like coconut loved it!! Thanks for sharing the recipe
