About this Cook
I am a professional home chef more of a major hobby of mine. I do weekly cooking for my fishing club, hence my user ID ftcchef (Freeport tuna club). I love cooking and fishing and that is a great combination (if you can catch the fish)
My favorite things to cook
I try to cook almost anything I love BBQ (I am thinking of venturing into the BBQ competitions cooking, with the Kansas City BBQ Association).
My favorite family cooking traditions
My Grandmothers and my Step Grandmother and my Step Great Grandmother (Polish, and German) taught me everything I know from making homemade Porgies to Sauerbraten and everything in between. Considering my Polish step great grand mother had 15 children to feed and family get togethers were in the 40 + with great grandchildren and so on.
My cooking triumphs
my very own BBQ spare rib recipe that I began making when I was 10 over the years I only tweaked a little of it. I have been now adapting it for smoking it for the BBQ competitions, and so far it has an awesome taste combination.
My cooking tragedies
along the way there were many tragedies but the worse one was when I was about 12 and made beef goulash. It got burnt and I tried to cover it up by adding sugar and tossing in grapes, my brother almost died from it, he asked me if I was trying to kill him that it was that awful.

German Pork Chops and Sauerkraut
OMG MOST DELICIOUS chops I have ever made. That was my husband's comment after his first bite. It was so good, that he told me he was taking it to lunch with him the next day. He just got home from work and told me that he was bringing another chop with him the next day for lunch. I hardly ever comment, but since my husband just told me he is going to eat it again the next day for lunch, convienced me to write a review. He said he loved the sauerkraut and I said, good thing I followed the advice of other reviewers and reduced the sugar to 1/2 cup, he told me when i make this next week, TO USE THICK BONED IN PORK CHOPS AND TO FOLLOW THE RECIPE EXACTLY AND USE THE CUP OF SUGAR... This has to be the best chops and thanks so much for sharing this awesome recipe. I would give it 10 stars if I could I did add a few adjustments, before searing the chops I coated them with salt fresh black pepper, onion powder and after removing the chops I deglazed the pan with 1/2 cup of red wine and poured it over the chops before adding the sauerkraut.

Busy Day Slow Cooker Chili
I have not yet eatten the chili as it still has a few hours to Cook, but I stired it a few times and couldn't resist tasting it. I did adjust a few items. I used (1) 28oz can petite diced tomatos Only had (1) can stewed tomatos and add (2) medium sized onions and (2) celery stalks diced and (4) cloves garlic minced along with the green pepper and can chilies. And chili powder added (1) additional tsp chili powder and a squirt of Sriracha HOT chili sauce. OMG it tastes so awesome I maynot be able to hold off for another 3 1/2 hours. Thanks for a great chili recipe.

Extreme Chocolate Cake
I am giving this recipe a 5star rating, though I didn't use the chocolate cake recipe, I used the butter cream icing, this is bar none the best butter cream icing I ever made successfully and tasted amazingly rich and thick and so so sinful I used the cake recipe from this site "dark chocolate cake I and that is also a 5star rated cake. My husband said it's the best chocolate cake I ever made from scratch, considering I only made 2 chocolate cakes from scratch, I was more amazed when it turned out perfectly and tasted OMG so so sinfully good.. next time I make another chocolate cake I am going to make the one from this recipe.
