Colcannon

I love colcannon, so when I received leeks and cabbage in my CSA box I thought I'd give it a try. I thought this recipe needed a little something to get my husband to eat it, so I also added cooked bacon. I substituted mace with nutmeg. It tasted great and I froze it in two portions for a freezer-meal side. Reheated great in the oven.

Chiles Rellenos Pie

I received a bunch of poblanos in my CSA box so I thought I'd give this a try. I substituted leftover shredded rotisserie chicken and panela cheese, which I like much better. I would also recommend topping with a red chile sauce instead of salsa, which is much better and more authentic. I love Chiles Rellenos, but I don't fry anything at home, this recipe is the perfect solution, very good!

Creamy Dill Cucumber Toasties

I decided to give this a try because it had such high reviews. I wasn't impressed with this at all. It didn't have much flavor and it had a wierd texture. I used Good Seasonings Italian dressing mix and something in it gave the cream cheese a gooey texture. I also tried making it with pumpernikel cocktail bread. There are much better simple appetizer recipes out there.

Calico Beans

Great! I omitted the celery and pork and beans, and used cans of kidney, lima, pinto and black-eyed peas. I also added a little more bacon, and some of our favorite Rudy's BBQ sauce, great for BBQ get togethers!

Chicken and Sun-Dried Tomato Bruschetta

Used the mixture to stuff chicken breasts. Just pounded the chicken breasts out thin, combined the rest of the ingredients (minus bread) and baked. Delicious!

Roasted Sweet Potatoes & Onions

Made a few changes and turned out great! Omitted liqueur and almonds and added 3 slices of thick-cut bacon (chopped). Used less than 3 tablespoons of oil. So delicious!

Mexican Shrimp Cocktail

I made this for my book club party and it was delicious! Instead of Clamato, I added about 2/3 can of spicy V8 juice. I also omitted the avocado. I chopped the large shrimp into thirds and placed the cocktail into endive leaves. It was the best shrimp cocktail I've had!

Slow-Cooker Chicken Tortilla Soup

AMAZING! This is the best chicken tortilla soup I've had. The only changes I made were: adding a whole chicken breast and letting it cook in the soup, shredding it just at the end of cooking time and I omitted the tortilla strips. I will DEFINATELY be making this again!

Pork Chops for the Slow Cooker

These were great and so easy! Based on other reviews, I doubled almost everything for extra sauce: 1/2 cup brown sugar, 2 tsp ground ginger, 1 1/4 cups soy sauce, 1/2 cup ketchup, 3 cloves crushed garlic and 1/4 cup honey. I used 4 frozen boneless pork chops, cooked them for 4 1/2 hours, and added cornstarch during the last hour of cooking. Will be making again!

Peanut Butter Bars I

These were very easy and my husband, dad and friend all thought they tasted great. The downside is that they are too soft when they weren't straight out of the fridge! Followed the recipe exactly, need to hold together a little more.

Soft Mahi Mahi Tacos with Ginger-Lime Dressing
