Creamy Coconut Cake

This was incredible! I did add a little coconut extract to the cake batter, baked in 2 9-inch cake pans, and spread the cream of coconut over it while it was still hot. I followed some of the other reviewers' suggestions not to add the sweetened condensed milk. I am so glad I followed their advice! It was perfect just with the cream of coconut! For the frosting, I used Sturdy Whipped Cream Frosting from this site and garnished with toasted coconut and chopped dark chocolate covered almonds on top. Everyone loved this! My three year old son asked if I would make this for his birthday next year!

Libby's® Pumpkin Cranberry Bread

This was very good! I did change a few things to make it a little healthier. I did 2 scant cups white sugar and 3\4 brown sugar, 1\2 cup vegetable oil and 1\2 cup applesauce, and dried cranberries soaked in warmed orange juice because I didn't have fresh cranberries. Delicious!

A Plus Carrot Cake

This was a great recipe as is but I felt that there was a little too much raisins and nuts. I did substitute applesauce for 1 cup of the oil, used half white and half wheat flour, and 3/4 cup brown sugar and 3/4 white sugar to make it healthier. Will definitely make again!

Apricot Bread

Sooo good! This was the BEST quick bread I have ever made. The only changes I made was following some other reviewers' suggestions, I used white whole wheat flour for half the all-purpose and added a little more butter (applesauce) and oj than what was called for. This bread disappeared so quickly that I am planning on making it again next week! Thanks for such an awesome recipe!

Mocha Layer Cake

I have made this cake twice now and everyone loves it! The only change I make is to leave out the corn syrup and the topping comes out fine. Even those who say they are not big fans of cake say they like this one!

Blueberry Pie with Flax and Almonds

I tried this pie while it was still slightly warm and thought it was just ok. When I tried it the next day after the pie had chilled completely it was fantastic! What a delicious, healthy dessert! Also, I'm not sure if I did something wrong but I had a good bit of the topping left over. I saved it to mix in with greek yogurt for breakfast the next morning. Delicious! Oh, I also used frozen blueberries, but may try thawing them next time.

Confetti Corn Muffins

My family and I really liked this recipe! I did add a little frozen corn and subbed whole wheat pastry flour for half of the all-purpose flour. Just for something different, I made these in my waffle iron. (My 2 year old loves waffles.) Then served with Debdoozie's Blue Ribbon Chili from this site. Just awesome!

Apple Crisp Cookies

These cookies were delicious! The only substitutions I made were the following: sucanat for all the sugar ( only a scant cup of sugar), 2 tbsp apple butter (all I had) and the rest applesauce. Because I had to sub applesauce which had no spices in it I included a little more cinnamon, dash of nutmeg, allspice, and ginger.

Baklava

I wanted to make baklava to surprise my husband who loves it. Even though it was my first time making this it turned out great! I toasted walnuts, made one and a half of the sauce. I ran out of honey so I used mostly honey and some maple syrup. I probably ended up using only 1 and a half sticks of butter. I also added a little lemon peel and orange peel. I found Sandra Lee's review to be very helpful and time saving. Thank you for a wonderful recipe!

Cream Cheese Frosting II

This was very delicious! I subbed ground sucanat sugar for half of the powdered and it gave it a wonderful light caramel flavor without an overwhelming sweetness. Will definitely make again!

Fruit 'n' Honey Granola

This granola was very good! I did replace the canola oil with coconut oil, added cocoa powder to half, and for the fruit used raisins, craisins, and chopped dried apricots. I preferred the chocolate granola!
