Cinnamon Raisin Stuffed French Toast

Reviewed: Dec. 26, 2011
I liked this recipe, but my husband said it was just ok. The only change I made was to add a little cinnamon, nutmeg, and orange peel to the filling and cinnamon, nutmeg, and vanilla to the egg mixture. I would give this recipe 4 1/2 stars if I could.

Apple Crisp Cookies

Reviewed: Dec. 22, 2011
These cookies were delicious! The only substitutions I made were the following: sucanat for all the sugar ( only a scant cup of sugar), 2 tbsp apple butter (all I had) and the rest applesauce. Because I had to sub applesauce which had no spices in it I included a little more cinnamon, dash of nutmeg, allspice, and ginger.

Baklava

Reviewed: Dec. 12, 2011
I wanted to make baklava to surprise my husband who loves it. Even though it was my first time making this it turned out great! I toasted walnuts, made one and a half of the sauce. I ran out of honey so I used mostly honey and some maple syrup. I probably ended up using only 1 and a half sticks of butter. I also added a little lemon peel and orange peel. I found Sandra Lee's review to be very helpful and time saving. Thank you for a wonderful recipe!

Pumpkin Gingerbread

Reviewed: Dec. 9, 2011
This was so delicious and moist! I cut the sugar down to a scant 2 cups and used sucanat sugar. For the oil I used half cup applesauce and half cup of coconut oil. I also substituted orange juice for the water and added slightly more spices than called for including nutmeg. The flour I used was white whole wheat flour. No one could even tell that I had made healthy changes to the recipe!

This was very delicious! I subbed ground sucanat sugar for half of the powdered and it gave it a wonderful light caramel flavor without an overwhelming sweetness. Will definitely make again!

Beth's Spicy Oatmeal Raisin Cookies

Reviewed: Nov. 12, 2011
So delicious! I'll definitely be making these again! Instead of shortening I used melted coconut oil as it is much healthier. You could not taste the coconut at all.

Raisin-Filled Cookies

Reviewed: Nov. 5, 2011
So delicious! My husband can't stop eating these cookies and my three year old keeps asking for more! The only changes I made was to use half almond extract for the vanilla. For the filling, I used sucanat sugar and a little less than called for in the recipe. I also substituted orange juice for one of the 2 cups of water, and used 2 cups of raisins. Thank you for a wonderful recipe!

Creamy Coconut Cake

Reviewed: Oct. 17, 2011
This was incredible! I did add a little coconut extract to the cake batter, baked in 2 9-inch cake pans, and spread the cream of coconut over it while it was still hot. I followed some of the other reviewers' suggestions not to add the sweetened condensed milk. I am so glad I followed their advice! It was perfect just with the cream of coconut! For the frosting, I used Sturdy Whipped Cream Frosting from this site and garnished with toasted coconut and chopped dark chocolate covered almonds on top. Everyone loved this! My three year old son asked if I would make this for his birthday next year!
