Sweet Potato Minestrone

Reviewed: Mar. 13, 2011
I really enjoyed this soup! It was great on a cold night. I kept to the recipe except I pureed the sweet potato. A soup I'm proud to serve my toddlers! Next time I'll cut down on the broth a bit and add more pureed sweet potato for a creamier texture.

Coconut Oatmeal Cookies II

Reviewed: Mar. 13, 2011
These are very yummy and addictive. I made them quite snack size which was a mistake as my hub kept poppin them in his mouth! They did not last long in our home. We did not add the chocolate chips though I'm sure they would have been a tasty addition. These actually, oddly enough, reminded me of a shortbread or a spritz cookie - even though they had oats and coconut. They were not too sweet at all ... just enough sweetness to keep us snacking on them! 4 out of 5 because they were not extraordinary but rather pleasantly yummy.

Amazing Pork Tenderloin in the Slow Cooker

Reviewed: Mar. 13, 2011
I'm giving this 5 stars because the end result was fabulous. Tender, sweet, yet savory. Oh and of course EASY! I did not have dry onion soup mix on hand so I created my own (fresh onion, dry onion powder, dry beef broth powder, chili powder, cayenne, turmeric, salt and pepper). I also added a touch of worcestershire sauce.

Butter Flaky Pie Crust

Reviewed: Dec. 10, 2010
Thank you for this! I doubled the recipe to have a top and bottom crust. Turned out fantastic! After the four hours rest in the fridge, the gluten was very strong. I had no problems with tearing while rolling it out. The butter was still cold with noticeable bits in the crust which causes a beautifully flaky buttery crust! Very light and very YUMMY! Thanks so so much! (PS - I used 2 cups AP flour and 1/2 whole wheat flour for my two crusts)

Moroccan Lentil Soup

Reviewed: Dec. 7, 2010
This was yummy. I followed a suggestion to use RAS EL HANOUT. in place of GARAM MASALA. Turned out very yummy. Next time I'll cook the carrots and celery with the onion, garlic and ginger before adding the rest of the ingredients. Thanks for the recipe.

Favorite Old Fashioned Gingerbread

Reviewed: Dec. 7, 2010
I really loved this recipe. I made changes to compensate for what ingredients I had on hand. I used both whole wheat flour and all-purpose flour (equal parts) because I didn't have enough of all-purpose flour. I used unrefined (raw) sugar, brown sugar and honey (1/2 c each) in place of the white sugar and molasses. I also used candied (crystallized) ginger (a generous tablespoon instead of a teaspoon). Lastly I added a smidgen of allspice. I also topped it with a melted douse of buttercream. It was soooooo yummy! Thank you so much for this recipe. I'll make it as much as I can this holiday season! I can't get enough. Oh and my hubby (who only likes chocolate) LOVED it.

Olive Oil Bread

Reviewed: Dec. 6, 2010
This bread has great flavor! When I removed the bread from the oven I poured more olive oil on top. Wonderfully flavorful bread. Thanks for the recipe. I did find the dough a bit dry too. I used less flour than recommended and more water. I used a Kitchen Aid, next time I'll hand knead it. Oh I took the leftover bread and sliced it into breadsticks. Added a little more oil, salt and basil and baked until crispy. Mmmm yummy breadsticks.

Roasted Vegetables

Reviewed: Dec. 6, 2010
I might have had too high of an expectation from reading some of the reviews ... or maybe this dish just isn't for me. This isn't a dish I will set out to make again - it takes too much time for a mediocre result. I do enjoy roasted veggies and I'm glad I tried this recipe out. It seems some people on here really enjoyed it, but for me it was just an okay side dish.

Lime Chicken Soft Tacos

Reviewed: Dec. 4, 2010
Really enjoyed these tacos. Thanks for the recipe. I made almost as written except I added fresh cilantro when I dished the chicken into the tortillas. The red wine vinegar really added great flavor! Will make over and over! I take that back, I've already made it over and over. =)

Pumpkin Turkey Chili

Reviewed: Dec. 4, 2010
I loved this soup. I've made it at least three times for guests and handed the recipe out four times. Everyone who has it loves it. Even the kiddos. I did add some spice to it. I added another couple cloves of fresh minced garlic, a pinch of cayenne pepper, a couple tablespoons of cumin, and added a few cups of chicken broth. I also put frozen corn in it since I had it on hand. I served it with fresh cilantro, red onion, and salsa. It was GOOOD!

Thank you so much for this easy and authentic tasting recipe! It's the only enchilada sauce I make now ... when I want red sauce that is. =)

Flourless Peanut Butter Cookies

Reviewed: Aug. 23, 2009
great flourless option, thanks. a drink is needed on hand for sure. i made these bite size after the first batch because of the sweetness. they do spread if you use white sugar, next time I will add baking powder to help them keep their shape. great taste, fun bite size snack but the average size cookie is a bit too much for me.

Eggplant Parmesan I

Reviewed: Aug. 17, 2009
Fantastic recipe. I used homemade marinara sauce and had to use Turkish cheese substitutes as follows: kasar/mozzarella, lor/ricotta, and mahilic/parm since I'm currently living overseas. My husband doesn't like eggplant at all so it was huge when he declared that he LOVED it! Will make this over and over again. Thank you for the recipe!

Authentic Kicked-Up Syrian Hummus

Reviewed: Aug. 17, 2009
My husband and I love hummus. We live in the near east so we are quite familiar with hummus of various kinds. I've had it in several countries, each with subtle differences. However, my husband said this particular hummus is the BEST he's EVER had. I think it was the addition of cumin. I start with dried chick peas since they are hard to find canned in this country. I must say that I also roasted red bell peppers and added some fresh parsley to this recipe. Other than that, kept everything the same.

Southern-Style Onion Rings

Reviewed: Aug. 17, 2009
Loved the cornmeal coating!!! Turned out fantastic! Will make these again. I did leave out the thyme as I am currently in Turkey and the thyme I find here is a bit different. Otherwise a fantastic onion ring and rather easy! I thinking I may modify the coating to fit it for chicken poppers!

Cinnamon Raisin Pinwheels

Reviewed: Aug. 17, 2009
First I divided the recipe in half. Didn't need 12 servings - though I'm sure we could have easily eaten more. I made a few slight changes. I added a teaspoon of white granulated sugar to the dough to sweeten it. I also reduced the milk by a third. I added a bit more brown sugar and melted the butter into it before spreading the mixture onto the rolled out dough. Rather than using muffin tins, I greased a pie pan and fit them all into it. Worked out perfect. I will make these again.

Easiest Peanut Butter Fudge

Quite rich and creamy! Made it exactly according to recipe and it turned out fantastic. It was just as easy to make as the marshmallow recipes. No hint of crystallized sugar. Perfect.
