Zippy Summer Shrimp

Just an idea for those that only have lime juice and cilantro on hand. I substituted those for the lemon and basil and added about 1/2 teaspoon of cumin and oh my my my!!! Great alternative to change this already awesome recipe up a bit!

Greek-Style Baked Salmon

Living in the Northwest and both my boyfriend and I being avid salmon fishermen we have it a couple times a week. This dish is a new addition to our small list of go to recipes. It's wonderfully light and filling! Added a layer of spinach as well which created a bit of juice so it almost poached but it was still incredible. Looking forward to experimenting with this one.... Thank you!

Chicken Cordon Bleu II

Wonderfully Superb! I did follow the modifiations of a few others and dipped in egg and italian breadcrumbs and fried in butter until browned then put in the oven. Sauce made seperate. Rave reviews from family!

Mom's Stovetop Pork Ribs

By far my favorite way to prepare pork now! Was delicious, tender and just incredible. BF raved about it. Did take about 2 1/2 hours to cook the water off but just made them more tender!

Green Chili and Cheese Chicken

Great for a quick meal. Made some changes due to lack of pepperjack and green chile's. Used cheddar and monerary jack cheese. Spices I used where chili powder garlic salt and some adobo pepper seasoning with a little black pepper. Turned out DELICIOUS!

Cajun Spiced Chicken

I read the reviews and definately agree that adding some more of the cajun spice is necessary for this dish. I also read a review about frying in sauteed onions and this made the somewhat doughy breading more crisp and flavorful. I added a bit of cumin to the onions as they where sauteeing. Very good! Will do again.
