About this Cook
I love to cook new things and try different recipes.
My favorite things to cook
Mexican foods. Just about anything.
My favorite family cooking traditions
My mom's potato salad (I've learned to substitute a little EVO for some of the mayo to make it healthier), and my mom's fried chicken.
My cooking triumphs
My oatmeal,macadamia nut,chocolate chip cookies.
My cooking tragedies
The time I took a turkey up to the mountains for Christmas for about 20 people and as I went to cook it realized it was spoiled.

Baked Spaghetti
This is a great recipe for pot lucks. I used Ricotta cheese, but I think I'll try the cottage cheese next time. My only problem was that I feel the extra 20 minutes for the cheese to melt is too much and made it a little too brown. Next time I'll just take the foil off earlier.

Meatloaf with a Ranch Twist
I didn't like the texture...it was too dense. Next time I'll use bread crumbs and double the sauce. I added 1/2 lb. of hot italian sausage for extra bite.
