Jo's Rosemary Bread

So yummy. I used fresh rosemary and followed other reviewers advice only adding 2 1/2 tsp of rosemary, it didn't quite give it enough flavor for my liking. Next time I will use the amount called for. I also used spelt flour, because that was all I had. Brushed the top with oil and sprinkled coarse salt on top and baked it on an oiled cookie sheet at 375 for 30 min. My family loved it.

White Sauce for Pasta

Quick and easy recipe, a good base. The bullion cube adds a unique flavor but I wanted a little more so I added a clove of garlic, pinch of salt, little basil, used heavy whipping cream instead of milk and black instead of white pepper and poured it over bow tie pasta. My pickiest eater who never asks for seconds on any kind of pasta loved it and had seconds. I added raw diced yellow bell pepper to my individual serving and thought it added a nice flavor. So many possibilities with this recipe.

Hot Artichoke Spinach Dip

I followed the recipe and wasn't thrilled with the taste. I refrigerated it, then later decided to try to improve it. I added 4 oz cream cheese, more garlic, more parmesan cheese and a squeeze of lemon, baked it again for 15 minutes and it was much better. The cream cheese really added a lot both in taste and texture. My husband and son both loved it. Next time I think I will add another can of artichokes as there wasn't enough for my liking.

Fabulous Zucchini Grinders

I followed another reviewers advice and put a thin layer of cheese on the sandwich rolls before adding the zucchini and other ingredients and the bread still turned out soggy around the edges. I added onion and bell pepper to the zucchini. It was good, healthy and my kids ate it but we weren't crazy about it.

Cherry Cream Cheese Pie

I followed the recipe exactly. I love that it is so simple and no bake. It was a little too rich for my taste. If I were to make it again I would definitely let it set overnight. I let it set 5 hours and it was still too runny, next day it was much better.

Turkey and Quinoa Meatloaf

I have made this recipe many times and my whole family, including my picky eater, loves it. Wonderful flavor and so much healthier than beef meat loaf. I usually double the paste that goes on top and I have never added the hot pepper sauce because I don't have any and my little ones don't like it. The last time I made it I didn't have any quinoa on hand so I substituted a 1/4 cup oats and ketchup for the tomato paste. I also was in a hurry and didn't sauté the onion, just chopped it up and threw it in and it still turned out great. I do prefer the original recipe though, especially the nutrients and flavor the quinoa adds.

Chilean Empanada

I was so excited to find this recipe. I lived in Chile for a year and have been craving empanadas ever since. These weren't as good as those I had in Chile but pretty close. Since other reviewers were saying the dough was too dry I only added 4 1/4 cups flour and used 2 sticks of butter instead of shortening and the dough was not dry at all and was very easy to work with. I put the dough in the fridge while I made the filling then took it out and rolled it.

Chicken Noodle Soup

I have made chicken noodle soup before but was looking for another recipe so tried this. I followed another reviewers advice and added a whole rotissori chicken and simmered it for 30 min, then removed and added pieces of chicken. I didn't like the oily taste the butter gave to this so I mixed 1/4c water with 1/3c cornstarch and slowly added it to the broth stirring constantly. It reduced the oily taste a bit and gave the soup a nice consistency that reminded me of Chick-fil-A chicken noodle soup. My kids liked it and it does have a good flavor but I think next time I make it I will leave out the butter and see how it turns out.

Zucchini Brownies

Yummm! I followed the recipe exactly. I had several zucchini from my garden and the first one I grated seemed rather dry so I used another that was more moist. After adding the zucchini the batter was sticky and gooey. My son stuck his finger in the batter and tasted it and said that's good. These did not turn out cake like at all but very moist and gooey. The only thing I changed was omitting the nuts since I have a child who is allergic and in place of that I followed another reviewer and added 1/2 c chocolate chips. I won't do that next time as these are very rich and chocolaty. This recipe is a keeper. If it weren't for the sugar these would be extremely good for you. My whole family loved them and my older son didn't believe there was zucchini in them.

Summer Snow Cone Syrup

Spinach and Sun-Dried Tomato Pasta

Spanish Rice Bake

Depression Era Corn Chowder

My family of Picky eaters loved this. I only used 1 can milk as others suggested and put half the soup in the blender. I also added some corn starch to thicken it up a bit. This made alot more than I expected but my family devoured it.

Baked French Fries I

French fries are one of my favorite foods and these are amazing, so good and good for you. We make these a lot and my kids say they are better than any they've ever had. In the summer we wrap them in foil and cook them on the BBQ to avoid heating up the house. About 15 minutes on each side. So yummy.

Slow Cooker Lasagna

I am rating this for the method since I love anything made in a crockpot. I omitted the meat, sauted onion, garlic, red & green peppers and zuccini and added that to the layers. I also added an egg and chopped spinach to the cheese mix and used ricotta instead of cottage cheese. I used 2 jars of spaghetti sauce and the noodles didn't have to be watched and turned out perfect. My husband who lived in Italy for a couple years said it was the best lasagna he has ever had. I loved that I didn't have to pre cook the noodles or heat up my house using the oven.

Veggie Burgers

Made these for dinner tonight and all four of my picky eaters ate them even my husband who hates veggie burgers. This is my first attempt at making veggie burgers and they were easy and had a wonderful flavor. I did add flour, only 1/2 cup, to the mix before refrigerating as one review suggested. They were a little mushy in the middle and a little sticky so next time I am going to try adding more oats. Healthy and delicious burgers, definately a keeper.
