About this Cook
I am a work at home mom. I have two young boys and my best friend and love, my husband to cook for each night. I learned the basics of cooking when I was fairly young. I have not always enjoyed cooking, but lately it has been fun. I go to church every Sunday while my hubby goes fishing to catch dinner. We live near the coast, so it is really a year round supply of fresh redfish! I work in Construction and so I have long days. I am always on the look out for time saving recipes!
My favorite things to cook
I love sweets! I dont get to cook them often, but I am always thinking about cooking them. I like to cook things that get eaten. I hate to waste my time and money. I don't claim to be a good cook, but my husband always tells my oldest boy (4) that Mommy never cooks something he wont like. That is a compliment around here! I like trying new things. My boys like to eat! Chicken and fish are served a whole lot around here. I am a sucker for beef. We just don't eat it but a few times each month.
My favorite family cooking traditions
My favorite tradition has got to be making my Grandmas krumkakes. We call them skones, dont know why, don't care. They are just good! As a kid I always helped my mom make them at Christmas. Now I own the family krumkake iron and so I make them at home.
My cooking triumphs
I would have to say I am most proud of the Valentines Day I made steak for my husband, then boyfriend, on the grill. It was my first time using a grill, ever... I was nervous, but I had a great coach. My boss was a good cook and he gave me a simple, yet perfect recipe. To this day, it is the only way we make steak at home! Good old, Greek Seasoning THATS IT! Put it on, grill it. So easy!
My cooking tragedies
Almost everytime I tried to make fish for the first 5 year my husband and I lived together, it was an utter failure. I am so greatful for this website! You are my new Coach!

Dianne's Fish Seasoning
I love this! I was looking for a simple tasty alternative to my husbands (over-used) blackening seasoning. I found this to be delicate and refreshing. I used this on DH catch of the day, Redfish and seatrout

Simply Steamed Asparagus
Simple. Nice for light flavor, but a bit bland for those who like a bolder flavor. Might be better with a bit of garlic.

Creamy Au Gratin Potatoes
I microwaved the potatoes for 8 minutes until almost tender in my baking dish wiht butter melted on the bottom. I then added cheese mix. I used whole wheat flour. I found the sauce didn't want to thicken well. The flavor was ok, but I wasn't overly impressed.
