Mexican Potato Nachos
This recipe sounds AWESOME. I will be making it but will be altering the recipe slightly. We're not huge fans of the refried beans so going to leave them out and I'm allergic to tomatoes so going to replace with Jalapeno peppers and another veggie. Otherwise will be made exactly as the recipe calls for. Any other suggestions to replace the beans would be helpful.

Grandma's Peach French Toast
This was awesome. I tried it last weekend for my husband and we loved it. I wanted to try it out before making it for my folks tomorrow for Father's Day breakfast. I inadvertently misread the recipe and bought fresh peaches instead of canned and because I didn't have quite enough I also used some fresh strawberries I had at home. The combination was wonderful. For this weekend however I bought the canned cling peaches and no strawberries so that I could follow the recipe exactly. I'm guessing that if you don't care for peaches you can use other fruits as well including Rhubarb or other berries. This was an absolute keeper. Thank you so much for sharing.

Broccoli Mac and Cheese with Bacon and Potato Nugget Topping
This was wonderful. I made a couple of minor additions / changes but I don't think it really altered the recipe much. I forgot to buy the Adobo Seasoning so used Garlic / Herb etc, I added a layer of fresh spinach before the adding the last layer of cheese etc, and then because we're not huge Tater Tot fans, we used diced seasoned hashbrowns instead. My husband loved it and we decided we're going to try using Pepper Jack cheese the next time to give it a little more kick.
