Mom's Zucchini Bread

I did some changes to make it more diabetic friendly and it worked well. Very tasy, moist, just what you want from zucchin bread. My changes were to use 1 cup applesauce and 1/4 cup oil, replace white sugar with Splenda Brown Sugar blend (more flavor and it is 1/2 splenda, 1/s brown sugar, so 1/2 the carbs!), and I think I used more zucchini than called for as I shredded it up in a food processor. Seems like a nice eary to adpat, recipe. Thanks!

Parmesan Basil Tomato Soup

Like others I modified this a bit, but it was great! Changes I made were minor, left out the rosemary (not something our family enjoys), and I added a can of diced Italain style tomatoes that I blended with an immerison blender before adding. I also added one can of no fat 1/2 and 1/2. Everything else was the same and this is a great soup.

Family Banana Nut Bread Recipe

I had really ripe bananas, but no buttermilk, so searched for a recipe without that. This was an excellent recipe. I was in a hurry and did not soften the cream cheese enough, so it ended up with tiny pieces of cream cheese in it but when it baked, they disappeared. Like other reviewers, I used brown sugar, but I used brwon sugar blend by Splenda and because I had 4 bananas, I used 4. I think this is a recipe that can be tweaked many ways and still turn out great!

Breaded Parmesan Ranch Chicken

Followed directions exactly and stuff did not stick very well to chicken. We thought just okay. Usually we use Shake and Bake with an equal amount of Parmesa added and get better results. Sorry! Just not for us!Crumbs were tasty, just did nit stick to chicken.

Cucumber Gyro Sauce

Exactly what I wanted, thanks for a great recipe. I used 2 cucumbers and after shredding them put them in a dish towel and twisted it to remove as much "water" as possible. That is my only hint, the rest was wonderful!

BBQ Pork for Sandwiches

Really, really good. I had some really rouch prok chops (boneless) and put them in the crockpot with the soup and cooked on low for 10 hours, then followed the rest of the recipe, shredding and then adding sauce and baking, Really great. Almost no work. Super!

Cream Cheese Squares

I have made these before but lost the recipe! They are so good and like others have said, you can easily make them sugar free by using Splenda instead of sugar. I also add all fruit preserves to the top of the cream cheese which others have suggested. You can also substitute puff pastry for this. Just put one sheet in the botom and one on the top, but you will have to slightly roll out or stretch the puff pastry to have it fit a 13x9 pan. Ooooooh, making these this weekend, can't wait. Thanks for posting the recipe.

Roast Sticky Chicken-Rotisserie Style

Excellent, juicy, brown, skin very crisp. Even gives you pan drippings. I found it a bit peppery for my taste, but will make it again with a different blend of spices. Just w of us, so after we ate it with noodles and a veg, then I used meat in chicken pot pies (4), and then used the carcass for soup. So we got multiple meals from one chkcen! Great value!

Oatmeal Apple Muffins

These are good, but I gave them 4 stars because they do not store well. They get soft and loose something in the process. Great, hot out of the oven or cool afterwards, but I put them in a ziploc and the next day they were much less in flavor. If you are making them for a day when they will get eaten at once, definitely give them a try. P.S. I added quite a bit more cinnamon and like I said, very yummy!

Maple Dill Carrots

This was good, but not great. It took my carrots a lot longer to cook than the 10 minutes mentioned in the recipe, but it was correct, once the water was done, they carrots were done. The dill and brown sugar gave it a pleasant taste, but nothing amazing. Perhaps I was expecting more. Anyway, just good, not great.

Homemade Chicken Gravy

Excellent easy recipe. I didn't have the cream, added just a touch of milk and a little bit (about a teaspoon) of cornstarch. I also added a few dried parsley flakes and a tiny bit of sage. Just mainly for color and because I was serving it with a sage stuffing. Thanks for a great recipe.

Southern Pulled Pork

This was really a 3 star, but that is my fault for using the cider vinegar suggested by some of the other reviewers. That was the overpowering flavor. But since that was my error, I am giving it 4 starts. Meat was very moist and very easy to shred. I do think next time I will add more smoke flavor, Will definitely try it again with NO vinegar! Thanks for the recipe!

Caramel Apple Pork Chops

Like others, I changed it a bit, but these are really uyummy and its the pecans that do it. This is how I did it. We are both type 2 diabetics, so I used Splenda brown sugar blend. I floured and browned 2 boneless pork chops, put them in a pie pan, added butter and pecans and apples to the frying pan and cooked until apples were crisp tender. Added cinnamonand ntumeg to the apples while cooking. Then put one teaspoon of brown sugar blend on top of each pork chip and kind of patted it down. Poured apples/nut mixture over the top and sprinkled with one more teaspoon of brown sugar. then I put hte pie pan onto of a rimmed cookie sheet and added frozen sweet potato fries. Baked it all together for 20 minutes at the temp on the sweet potato fry bag (425?). Everything is done at the same time that way. Also you can add more apples or a veggie to make it a really big meal for heartier appetites. But great recipe! Made it twice in the past few weeks, its a keeper!

World's Best Cream Cheese and Pineapple Dip

Sorry, this is not what I remembered of a dip I used to love. It was awful, runny, even though I drained the pineapple really well, and a funny taste. I am giving it 3 stars even though after one taste I thew it away, because perhaps it was that it just did not live up to my memories. Very, very off taste to me. since others have reveiwed it so hightly must just be me.

Chicken Zucchini Casserole

I loved the zucchini, it was tender but a bit crisp and very flavorful from the stuffing, but its like the stuffin leached the spices into the zucchini, kind of blah. Not something I would make again, but fine for a quick easy dinner on a busy night.

Super-Delicious Zuppa Toscana

Exellent, re-warms well, just one suggestion, do not fry the bacon with the onions. Fry the bacon, then remove from pot, (I use lean bacon, so very little fat left), saute onions and garlic, then add bacon back and continue with rest of the recipe. Great recipe, my husbnd loved it and it makes great leftovers.

Fast Chicken Soup Base

This is excellent. Makes a rich full bodied soup. I made it with a rotisserie chicken and the skin darkened the soup a little too much for my eye. But the flavor was fantastic, I added a couple cups of chicken broth from a box and that "lightened" the color. Great idea!

Apple Radish BBQ Ribs

I left out the garlic salt, worchestershire and horse radish and they turned out great! 4 lbs is a rack of ribs, I cut them in quarters to fit in the stock pot and it took two large bottles of apple juice to cover them. But we didn't need 3 cups of BBQ sauce. The meat was incredibly tender, the sauce had the nice flavor of the apples as did the meat itself. Great recipe, will use over and over again!
