Lemon Blueberry Drop Scones

I made a few minor changes to this recipe because I have a diabetic child. I replaced one cup of the all purpose flour with one cup whole wheat and ground flaxseed to add some fibre, reduced the sugar to a 1/4 cup and used oil instead of butter. These are the fluffiest, lightest scones I have ever had, therefore I'm not sure if I would classify them as such. Either way whatever you want to call them, they are awesome & my son concurs!!

Clare's Whole Wheat Potato Bread

Made this yesterday afternoon. I too had to add an extra cup if not more of flour. I was a little concerned as the dough was still a little sticky and quite heavy but they rose beautifully and the bread was excellent. Will definately be a keeper in our home! Thanks for posting.

Apple Oatmeal Cookies II

I just took these out of the oven & ate one. I don't know why anyone would add extra sugar to these, they are plenty sweet enough. I too replaced the margarine with applesauce. I added a handful of cranberries but I had to add an extra cup of dry ingredients to get rid of the soupy consistency. I had to bake mine for 25 minutes before they started browning. All in all a guilt free treat that I have no problem feeding to my 10 year old diabetic child. thanks

Barley Bake

I made this last night with minor modifications, I sauteed celery, carrots, garlic along with the mushrooms & replaced pecans with pine nuts. I used chicken stock instead of vegetable stock. Although I really enjoy barley, I found that it overpowered the rest of the ingredients and its the only flavour that came through. Although very nutritious, I won't be making this again.
