Chicken Enchiladas III

I saw all the reviews stating "too much cheese" and thought, "Blasphemy! There's no such thing!" Never again shall I doubt. There was INDEED far too much cheese in this dish. Serving it with salsa helped, but next time I will absolutely cut down on the cheese and increase the meat.

Marinated Ranch Broiled Chicken

Made this Monday morning and let it marinate while I was at work. It turned out very well -- the chicken stayed nice and juicy. I did end up adding more oil and vinegar, because the mixture was a little too gritty and lumpy and not liquid enough to marinade properly at first. Also, I didn't have red wine vinegar, so I used basalmic -- and for the hell of it, I added one small splash of soy sauce. Very tasty, and extremely simple -- two of my biggest requirements in recipes.

Gourmet Grilled Cheese Sandwiches

Following the advice of other reviewers, I cut the mayo down to 1/2 c and it worked just fine. We also didn't have any garlic salt on hand, so I used some Mrs Dash and a bit of garlic powder -- gave it just the right flavor. We'll definitely be making this again.

White Cheese Chicken Lasagna

This is INCREDIBLE. So cheesy and rich and delicious. I made little tweaks here and there to save time -- pre-made Italian chicken breasts that I shredded, dried parsley flakes, and a spice container of minced garlic -- and it was still fantastic.

Crunchy Romaine Strawberry Salad

This was a great and simple salad. The only changes I made were I put the walnuts and ramen in without toasting them -- it still turned out wonderfully.
