Tuna Fish Salad

Oh. yum. This is my new fave tuna salad. The capers and red wine vinegar someone suggested just enhanced it really well. I started out with half the mayo, based on several comments, and didn't add any. Loved it that way! My husband will be home soon, and I almost want to hide it. But I want him to experience it, since he's the love of my life.

Fajita Marinade I

LOVED this marinade. Although, we made it last minute, and just poured it in pan to cook meat and veggies. In place of water, I used hard apple ginger cider. We decided it would be good with just peppers and onions, chicken, fish, shrimp. I might lick the pan.

Salsa Chicken

GREAT! Saved time by slicing fat chicken breasts lengthwise in half to make four thinly sliced breasts, & at 15 minutes, they looked perfect for the anointing of the cheese. Used Taco Seasoning I from the site, excellent.

Carrot Cake Martini

I didn't like it much until i added 1.5 to 2 jiggers kahlua. Now it is somewhat carrot cake-ish, definitely good and drinkable.

Serbian Ground Beef, Veggie, and Potato Bake

This is fantastic! I did the spices exactly as recipe says. I Didn't have celery, carrots, or bell pepper (weird, right?), so I subbed broccoli. I did add a center layer of potatoes; good call, other reviewer. On top of the uppermost potatoes, I added a mixture of 2 tablespoons almond milk, 1 tablespoon olive oil, and rosemary/garlic seasoning. (Didn't use half-n-half due to some lactose intolerance). Man, this was incredibly flavorful. All family members wanted seconds.

Olive Oil Dip for Italian Bread

Super Easy Chocolate Cupcakes

Fantastic flavor and texture. I was afraid they wouldn't be a deep enough color (was making halloween spiders), so added a tablespoon of chocolate syrup to that last 1.5 cups of water (replacing fluid, not adding volume). Perfecto! Thanks for a great recipe!

Honey Wheat Cookies

Great! Ran out of honey, so used half amount as molasses. Used crunchy peanut butter. Added dairy free mini "chocolate chips" and dried cherries. Added 1/2 cup brown sugar. Added cinnamon, ginger, allspice (1/2 tsp each).Sprinkled tops of half with colored sugar. A dozen "disappeared" within 5 minutes. A dozen left to go.

Cherry Cobbler I

Great cobbler. Lactose intolerant, so used soy milk and lactose free butter substitute. Also, added an 1/8 teaspoon almond extract to cherries, and topped with chopped almonds. Ate it with lactose free vanilla ice cream.

Pat's Cream of Potato Soup

Added shredded carrots, white beans, & sour cream instead of half and half. Each person customized their bowls with crushed red pepper, parsley, or oregano. Fantastic. My 17 year old said she was so proud to be part of our family because of this soup.

Banana Chocolate Chip Muffins

I tailored this recipe to my lactose intolerance and highish cholesterol problem. Followed the same instructions, but: 3/4 cup wheat flour, remaining flour all purpose. 3 Tbsp cocoa powder. Just under a Tbsp baking powder. 2 mashed bananas. 1/2 cup almond breeze milk. 2/3 cup olive oil. 1 egg, 1 egg white. 3/4 cup dark chocolate chips, 1/2 cup walnuts. 1/4 cup dried cherries. Delightful.

Chocolate Ganache

Perfect! Used grand Marnier instead of rum, and semi sweet mini chocolate chips, only because these were on hand. Poured over a cracked top cheesecake. It filled in the cracks, the top is completely smooth, and the slices look pretty.

Simple Whole Wheat Bread

Best bread I ever made!! And I make a lot. I used my bread machine to make dough (added liquid ingredients, then flour, salt yeast). I also divided the recipe in half, and made two small loaves. So: added 1.5 cups warm water to bread machine pan, then 1/3 cup honey, 2 tablespoons melted butter, 2.5 cups bread flour, 2 cups whole wheat flour, 1.5 tsp salt, 2 1/4 tsp yeast. Then selected "dough cycle". Then took dough out 2 hrs later, separated into two equal portions and baked at 350 for around 30 minutes. Superb bread.

Blueberry Cream Muffins

I've made these three times, and with slight variation, they've been great each time. The best was when I added 1 cup frozen blueberries, & 1 cup frozen raspberries. I also added the streusel topping. I alternated adding the sour cream and dry ingredients and followed the sugar and oil addition instructions, & it does seem to make the texture better. Also, I've cut the recipe in half each time, using 1 1/4 cup sugar, 3/4 cup oil. Also, when I ran low on sour cream, I used plain yogurt with the sour cream, & I tried peach yogurt. Plain was best.

Whole Wheat Banana Nut Bread

Very tasty! Made 12 muffins (~20 minutes). I was afraid to go all the way whole wheat, so did a cup of wheat and 3/4 cup all purpose flour. Also added a cinnamon streusel topping, delightful.

White Bean Chicken Chili

Great healthy chili. I didn't have corn, but used newmans chunky salsa, & a can of diced tomatoes. Everything else I did the same, & it's great! I liked the broth thin. My teenagers loved it.

Banana Cupcakes

Great! Had to make some substitutions. I used 1 cup spelt flour, 1/4 cup whole wheat, 1/4 cup all purpose flour. Added 1/2 cup chopped pecans. For the icing I used 1/4 cup ghee, 1/4 cup butter flavor crisco, & 3 tbsp vanilla flavored soy milk. My picky teenaged daughter ate four of them!
