Apple Cinnamon Oatmeal Bread

Great to see a recipe incorporating instant oatmeal into baking. I was getting very tired of the same old oatmeal breakfast. I followed the recipe except I reduced the sugar into half and added some blueberry and walnut. Also, I had to add about 1/2 cup of soymilk because the batter was rather a hard dough. It came out perfect and it was great for breakfast with a cup of coffee.

Walnut Raisin Scones

I followed the direction exactly and scones came out fluffy and delicious. They were great served with honey or jam, but on their own, they weren't sweet enough. Next time, I'll add more sugar.

Amazingly Easy Irish Soda Bread

Wow, it was my first time making Irish Soda Bread and it was pretty easy to make and tasted great. Upon TMoore's review, I turned down the temp. tiny bit to 370. Despite this attempt, the top crust was crispy and hard while a toothpick inserted into the center came out doughy. By the time a toothpick came out clean, the bottom crust was too crispy, dark, and hard. Next time, I'll try 350-360 degrees. Nonetheless, it was a great receipt and I really enjoyed it.

Stuffed Green Peppers I

Thanks for the recipe! I love bell pepper, but I just do not know how to incorporate it into many dishes. This recipe is so perfect. I followed the basic structure of the recipe with some adjustments based on reviews. I used ground chicken and added some paprika, cayenne, garlic powder, poultry seasoning, Italian seasoning, and doubled Worcestershire. I didn't have tomato soup, so I used tomato sauce diluted with chicken stock. I also topped the stuffed peppers with Monterey pepper jack cheese. It turned out great but I see how it could have been better cooked in tomato soup. I like how this recipe has infinite potential to cook with bell peppers. Thanks.

Mini Parmesan Scones

Like other reviewers said this recipe is more of biscuit than scone. First time I made it, I followed the recipe exactly. It was good but lacked some flavor. Second time around, I added some pesto (I just had some leftover pesto in the fridge). It turned out flavorful and delicious. Btw, I didn't want to bother cutting the dough into small pieces, so I used muffin pan.

Chicken Piccata with Artichoke Hearts

I followed the recipe exactly as it's stated. 2 tbs of olive oil weren't enough to cook the chicken so I added more. I found using the juice of capers was a bit too much of sour flavor. Also, I added some chopped parsley. Other than these little nitpicks I found this recipe to be very flavorful without using excessive amount of butter. It was seriously a wonderful dish for my 1st wedding anniversary dinner with my hubby over glasses of nice white wine.

Teena's Spicy Pesto Chicken and Pasta

I would make this again and again!! It turned out to be so much better than I anticipated. I used chili powder and cayenne pepper instead of chile paste. Along with chicken I also added some shrimp, peas, and broccoli. Chicken turned out to be a bit dry, but the shrimps were succulent and well-seasoned. Also, I added some reserved, salted pasta water to the dish and it created creamy, cheesy sauce. oh, I omitted cilantro. Now I'm really curious how the dish would taste with chile paste.

Addictive Pumpkin Muffins
