Italian Chicken and Chickpeas
Good stuff, but previous reviewers are correct about the heat. Eliminate the cayenne and up the red pepper flakes to taste, probably in the range of 1/2 - 1 tsp. For a little more depth and complexity in the sauce, add 1 Tbsp. of balsamic vinegar during the cooking process.

Chinese Chicken Soup
This is delicious as a base and lends itself to all kinds of variations: beef, shrimp, etc. Chop the celery fine and add it early on and it will have a chance to cook completely. I added 1 carrot finely chopped, as well.
