Italian Wedding Soup I

This soup is wonderful! My husband made this for my monthly scrapbook workshop last night and all of my friends loved it, too! He tripled the recipe and the 3 cups of orzo was a bit much so next time we will scale back on that. Also, we used 1/2 ground turkey and 1/2 ground sausage instead of beef. Yummy!

Chicken Kabobs Mexicana

Not much flavor. I even let the chicken marinate overnight. My husband ate after the rest of the family so I cooked his separately and put olive oil/salt/pepper on his veggies before cooking the kabobs and that helped.

Albondigas Soup I

This is wonderful! I'd never had Albondigas until I came across this recipe while looking for something different to use sausage in. I made some homemade tortillas (from a recipe found on this site). Very good comfort food!

Orange Fluff I

My grandma used to make this all the time for us when we would come over for a visit. To make a small batch I use 3 oz. orange jello, small can crushed pineapple well drained(roughly the same size as a tuna can), 6.1 oz can mandarin oranges well drained, 16 oz. cottage cheese and and 8 oz. tub cool whip. It's one of my favorite recipes! Definitely a hit with my husband and children.

Kung Pao Chicken

Very Good! My husband and I both enjoyed it. It was better than any restaurant version I've had. I left the spicy sauce off of some of the chicken for my 2yr old and 3yr old to enjoy. Will definitely make it again!

Brownie Caramel Cheesecake

DELICIOUS! I couldn't find the 9 oz. brownie mix either so I used the 10.4 oz by Betty Crocker and followed the directions on the package and it turned out FANTASTIC! I cooked the brownies about 15 minutes and that was plenty. After the cheesecake portion was made and put on top of the caramel I put double tin foil around the bottom of the pan and set it in a pan of warm water to cook in (an allrecipes.com hint). It looked like I bought it from a gourmet shop. I will definitely be making this again. Thanks!!

Cinnamon Buns

My two year old and 9 1/2 month old loved them. My husband and I thought they were OK but definitely like yeast cinnamon rolls better. They're OK in a pinch and kids definitely like them.

Chicken Enchiladas II

I've made this three times now! I had always thought making enchiladas was hard so I never tried it until I found this recipe! My husband and I do not like mushrooms so I substitued cream of chicken soup for the cream of mushroom and it was great!

Apple Dip

My mom tried this dip out quite a few years ago and we have always LOVED it and now I make it for my family! Our favorite way to eat it is to add chopped pecans to the mix and eat it with Granny Smith apples. FANTASTIC!
