Roasted Cauliflower Soup

This was a great tasting soup. Roasting the cauliflower gives it lots of flavor. It did come out quite thick with the 3T of flour. I ended up adding another 8 oz. chicken broth. I will definitely make again.

Rich and Creamy Roasted Eggplant Soup

This soup was great! We had to substitute 2 cups of chicken bouillon for 2 cups of the stock but it turned out really good that way, too. Will definitely make it again.

Chicken Enchilada Dip

Fantastic... will make again. Substituted 1 tsp chili powder for the jalapenos and used only 1/2 the amount of shredded cheese and mayo. Added 4 oz. of sour cream and 1 Tblsp minced garlic.

Ham and Split Pea Soup Recipe - A Great Soup

Great recipe. I used mostly stock and just a little water. I added 1/4 cup diced carrots and pureed the vegetables after sauteing them. I used a purchased smoked ham bone which added lots of flavor. I simmered the soup for 4 hours before eating so it was nice and thick. Delicious. I will make again.

Broccoli Cheese Soup VI

very good. It actually took a while to find a recipe that didn't use some hideous process cheese or can of soup in it. Soup recipes from scratch are always the best. I added some garlic powder and I doubled the cheese to 8 oz. I also used 2 cups half and half instead of the 1 cup water. I like soups REALLY creamy. I will definitely make this again. Maybe with a couple more alterations. This is a great soup for doing your own thing. :)

Spicy Eggplant

This is very good. I didn't even have all the ingredients and it still turned out great. I had sesame infused olive oil which I used instead of the salad oil. And then topped it with some actual sesame seeds. I didn't have the oyster sauce or the garlic sauce. I would make this again.

Spicy Refrigerator Dill Pickles

These pickles turned out very good. I substituted ground red pepper for the pepper flakes (because I was too lazy to go to the store). I did add some alum as was suggested by someone else. Nice and crunchy. I will definitely make these again.

Coconut Shrimp I

This turned out great. It's a bit putzy but easy. Definitely freeze for 15-20 minutes before frying. The batter sticks better to the shrimp. I prefer to eat as soon as possible without warming in the oven. The orange marmalade dipping sauce was good, too.

Tropical Pork Chops

This was very good. The sauce is quite strong but the pineapple sweetens it out perfectly. We had fresh pineapple in the house which I cut up. I know I used at least 1/2 of pineapple chunks. I love pineapple. I would make this again.

Strawberry/Rhubarb Crumb Pie

I believe this recipe would have been great as is, but since I do not have a kitchen scale, could not weight out 3/4 lb. of rhubarb. So I filled up my 2 cup glass measuring cup with rhubarb and an equal amount of strawberries (i love strawberries), used the full amount of sugar and added a tablespoon of corn starch. I also used heaping tablespoons of flour since I'm sure I had more fruit in the pie than intended. But it comes out perfect. Even though it doesn't have time to 'set', I love eating a piece warm from the oven with some ice cream. Will definitely make this again in the future.

Kiwi Pineapple Cheesecake

This looked wonderful in the springform pan but did not set at all. When I released the pan the contents simply oozed all over the place. I served it at a family dinner so I was very embarrassed at the outcome. It tasted okay but looked like a pile of goop on your plate. I would not make again. (not sure what alterations are necessary to make this recipe 'set'.)

Spanakopita (Greek Spinach Pie)

What a PITA to chop ALL of that fresh spinach, but it sure pays to use fresh - what a taste difference, texture, too. I know others substituted frozen, but I would not. Take the time to use the fresh spinach. This is a keeper. This takes longer than 30 min for prep.

Jam Filled Butter Cookies

Great cookies. I dipped the topside in powdered sugar while still a little warm (it sticks better). Also, use a nice thick preserve, not a jam or jelly. Makes a big difference, won't be runny and will give the cookie MUCH more flavor.

This was great. I didn't think the difference between white and dk brown sugar would be that big, but that maple-y flavor of the dk brown sugar, the orange and wine make these cranberries delish!
