Heather's Grilled Salmon

Reviewed: Dec. 28, 2012
WOW! This was amazing! I let it marinate for around 3 hours and the flavor was just absolutely wonderful. Best grilled salmon dish I have ever made. Make it and you won't be sorry!!

Pita Chicken

Reviewed: Jun. 30, 2011
A++. Very very good. I double the seasonings for the chicken (except the salt & cayenne) and used spicy salsa. Used greek yogurt instead of sour cream and whole wheat pitas. Also added slices olives to the mix. VERY flavorful and everyone couldn't get enough! This recipe feeds 3 easily. Thanks!

Mock Coconut Pie (Spaghetti Squash Pie)

Reviewed: May 6, 2011
This was surprisingly good! I gave it 4 stars because there's no way this would taste like coconut pie without the (1 teaspoon) coconut extract I added. I also left out the optional seasonings because I don't think coconut pie should have cinnamon or nutmeg...MAKE SURE YOU CHOP OF YOUR SPAGHETTI SQUASH STRANDS FIRST! Make sure the bits are pretty small and add the coconut extract. Also, HALF THE SUGAR. It was perfect sweetness with only 1/2 cup of sugar so I couldn't imagine how it would be with the full amount!

Anniversary Chicken I

Reviewed: Dec. 17, 2010
this was VERY good but with some changes-- First, you MUST use real bacon (I used 3 slices for 4 chicken breasts). Also, I only had teriyaki marinade not sauce so I marinaded the chicken for an hour and browned it in the same pan I cooked the bacon in (so I used the bacon fat instead of oil). I used sharp cheddar cheese and this dish was amazing! And the green onions are a MUST it gives it that great "creamy bacon and chives" flavor. Give this dish a try!!

Baked Teriyaki Chicken

Reviewed: Aug. 8, 2010
this recipe was DELICIOUS! I was skeptical about the amount of time it would take to cook the chicken (an hour seemed way too long) but ended up being perfect, the sauce made a delicious coating on the outside of the chicken and it tasted just like something you might get at a chinese restaurant (but healthier since it's just baked!) like others, i doubled the sauce, this is a MUST, i used up ALL of the sauce while basting and there is no way i could need just half. Seriously...this is a MUST MAKE recipe!!

Lemon Chicken Piccata

Reviewed: Jul. 29, 2010
This recipe was great! My family loved them and the chicken turned out perfect despite the fact that i've never panfried chicken before. The recipe was easy and remotely fast to finish. My only changes were this- since I read that it was bitter I just put the zest of one lemon into the sauce instead of the whole lemon slices, I also pounded out the chicken breast so they would be a little thinner, cook faster, and be more tender. The only problem for me was that the sauce didn't quite thicken up on me even though i reduced it for a long time, so the sauce was on the thin side (yet VERY flavorful, SO GOOD). This is a MUST recipe and will definitely be made again!

Paprika Pork Chops

Reviewed: Jun. 11, 2010
it took much longer to cook than what it says on the recipe but i think that's because my chops were still slightly frozen when i put em in. The topping didn't have a powerful flavor but i kind of liked it that way because you could still taste the pork, all in all a delicious recipe to use if i had leftover sauerkraut, but I probably wouldn't go out of my way to make it again, got rave reviews from the family though!

Feta and Slow-Roasted Tomato Salad with French Green Beans

Reviewed: May 17, 2010
this was DELICIOUS! i ended up not using all 6 ounces of feta cheese, that may have been too much. Also, next time i would use a lot more cherry tomatoes, 12 was simply not enough! I cut up a leftover grilled chicken breast and mixed it into the salad, tasted GREAT with the "honey mustard" type dressing.. This salad fed 3 as a meal so could feed 6 as a side dish easily. Seriously all the flavors in this were AWESOME. you have GOT to make this!!

Hershey's ® 'Perfectly Chocolate' Chocolate Cake

Reviewed: Apr. 5, 2010
my cake turned out awesome but only because i made a couple changes- i substituted 1 cup of water with one cup of fresh brewed coffee, also substituted applesauce for the oil and it was delicious! Also, for the frosting i only added 2 cups of sugar and it was super sweet, might not even need that much! definitely not 3 cups...
