Extra Gingery Bread

Thank you for a great recipe! I made mine into muffins, with half wholemeal and half white flour, half a cup of white sugar and half a cup of brown sugar and only half a cup of molasses and they turned out great. I got 12 large muffins... they rose beautifully and gave crunchy muffin tops straight from the oven. I cut back on the spices as these were for my 3 year old... I only used 1 tspn cinnamon and 1 tspn cloves and I didn't have any crystallised ginger, but they still tasted fantastic. After a night in the fridge they tasted even better as the flavours really blended in. I never found out whether they tasted even better after 2 days cos they were all gone by then!! I'll definitely be making these again.

Eileen's Spicy Gingerbread Men

A fantastic recipe! It was my first attempt at gingerbread men and they came out exactly how I wanted them to. My cookie cutters were just under 3 inches and the gingerbread men were perfect after 8 minutes of baking. I did find that my dough was too dry and crumbly to come together into a ball until I added the rest of the egg (white) into the mix... maybe it's because the egg I used was a bit small. Once the egg white was in, it came together nicely. As recommended by other reviewers, I rolled in between 2 pieces of parchment paper and had no need to add any extra flour. I achieved a thickness of just over 1/4 inches by placing a pair of chopsticks on either side of the dough while rolling and that worked a treat. I had intended on decorating the cookies, but my 3 year old was already munching on them happily while I was rolling the last of the dough.

To Die For Blueberry Muffins

A very good recipe... I have made these muffins 3 times and each time they turned out beautifully dome-shaped. I use half wholewheat flour and less sugar and to make up for some moisture and sweetness, I add one or two ripe bananas and they taste fantastic.

Awesome and Easy Creamy Corn Casserole

I loved this. I used less butter than called for and a low fat sour cream and it still tasted very buttery and creamy. The texture and flavours make it very addictive!

Sarah's Banana Bread Muffins

These muffins turned out great... I did make the following adjustments after reading many of the reviews... I used 4 large, ripe bananas instead of 3, used almost a cup and a half of wholemeal flour and the rest white flour, used 1/2 cup sugar instead of 1 cup and it was still quite sweet because of all the bananas.. next time I may use even less sugar. Added 1/2 tspn vanilla extract and 1/2 tspn cinnamon. I used only 1/4 cup canola oil instead of 1/2 cup and added approx 1/4 cup crushed pineapple as I happened to have that left over in the fridge. Baked for around 25 minutes and they came out very moist and surprisingly light, given that I'd used so much wholemeal flour. My 3 year old gobbled these up and kept asking for more! I will definitely make these again and may try adding some oats next time.

Sky High Yorkshire Pudding

These really did rise pretty high in the oven, but they collapsed pretty quickly too! They did taste great though and they were really easy to make. Mine were done after only 20 minutes... lucky I was keeping an eye on them, otherwise I think they would have turned to charcoal by 30 mins!

Banana Oat Muffins

Good recipe but it did seem to call for alot of baking soda/powder so to avoid the after taste that some reviewers mentioned, I reduced the amount of baking soda to 3/4tspn only. I added mini choc chips to half the batter but I felt that the chocolate over-rode the flavour of the bananas and oats and these muffins are better without the choc chips. I'm not sure I liked the crunchy / chewy texture of the rolled oats against the soft texture of the rest of the muffin so maybe I will try using quick cooking oats next time
